Slow Cooker Chicken Tacos

It’s summer time and as you know, no one wants to use the oven during sizzling hot days. Hence, the magical slow cooker becomes the numero uno kitchen appliance that comes in handy. This summer I intend to use it for making all kinds of food from appetizers, main dishes and desserts! Love that you can just dump all the ingredients in and voila a few hours later, you have the most amazing, moist and flavorful dish! 

One of our favorite meals is Mexican for sure. We have it at least once a week, perhaps more as we love spicy and flavorful food. My kids adore tacos, too so it’s always a happy day when I make it for them. I asked a friend of mine how she makes her slow cooker chicken tacos and though I can no longer remember the exact recipe she gave me as it was handed verbally (I wish I had my younger vibrant memory days still!), I do remember one specific ingredient she mentioned in making it, “Just add a little bit of salsa.” Proceeding from that, I just added a few more ingredients I had in my pantry and voila – the result is this flavorful and super-easy Chicken Tacos. I was afraid my kids wouldn’t like it much as they are partial to ground beef tacos but my little Sophie proudly beamed at me after she finished her food and said, “Mom, I finished all my chicken,” (taco shells and toppings included as well!) and showed me her empty plate. That’s a good sign, that means this recipe is now a keeper and you can be certain it will be reproduced for many, many years to come.

So, get your slow cooker out right now and make this truly tasty Chicken Tacos and enjoy the summer without sweating while cooking!

Ingredients




1 Onion, chopped
2 lbs boneless, skinless chicken breasts or thighs
1/3 cup Salsa*
1 teaspoon Garlic powder
1/2 Tablespoon, Cumin powder
2 whole Cloves
2-3 dried Bay leaves
3/4 cup water
1 1/2 teaspoons Salt or to taste
1 teaspoon freshly ground Pepper or to taste

*I used Trader Joe’s Organic Roasted Tomatillo and Yellow Chili Salsa but feel free to use your favorite brand and adjust the heat level to taste.

Procedure

Place the chopped onion on the bottom of the slow cooker and add the chicken pieces on top. Add the rest of the ingredients. Cover and cook on high for 4 hours or 6-8 hours on low.

Shred the chicken pieces. Serve with crunchy or soft tacos with chopped cilantro, lime wedges, tomatoes, shredded cheese, sour cream on the side. Have this with some corn salsa, too and wow, it’s heavenly!

    So funny, I see this recipe today as I'm preparing one very similar for vacation next week! Putting it all in a Ziploc, freezing and packing it and my slow cooker for the cabin on the lake!

    Slow cookers are one of the best modern inventions ever. They rank right up there with air conditioning. Your chicken tacos look really good and I can tell will be great for those crazy busy days!
