Hello summer! I love June not only because I was a June bride (we just celebrated our 12th wedding anniversary on June 19!) but because it means the beginning of berry season.

From here on the freshest and juiciest strawberries begin to appear on the market to be followed by raspberries, blueberries, cherries, you name it!

I am grateful that both my kids love fruits – pretty much all kinds of fruits but especially berries. That means it’s not as tricky to make them eat fruits as opposed to vegetables which occasionally require some hard coaxing.

One of the easiest desserts that I make for them when berries abound is a creamy fruity Fool.

Raspberry Fool

This classic English dessert has been enjoyed since the 17th century and it’s not a surprise because despite its silly-sounding name it’s actually a delicious and refreshing dessert, not to mention, very quick and easy to make, too!

I read that the word ‘fool’ was originally spelled ‘foole’ and was derived from the French verb ‘fouler‘ which means to crush or press hard which is essentially what you do when you break down the fruits by pureeing it.

The crushed fruits are then folded into whipped cream to produce a creamy and fruity dessert. What we love is the versatility of this dessert as the taste can be as varied as the fruits you choose to use.

You can even make a low-fat, healthier version by using yogurt instead of cream but for this version, we are sticking a little closer to the original. Don’t let summer pass without trying this quick, easy and yummy dessert!

WHAT ARE THE INGREDIENTS FOR THIS STRAWBERRY AND RASPBERRY FOOL?

  • 2 cups heavy or double cream
  • 3 Tablespoons Sugar or to taste
  • 1/2 teaspoon Vanilla or Almond extract
  • 1 1/2 cups each Raspberries and Strawberries, cleaned and hulled
  • 1/4 cup Greek yogurt
  • 2 Tablespoons Honey or to taste

HOW DO YOU MAKE THIS STRAWBERRY AND RASPBERRY FOOL?

  1. Place the heavy cream, sugar, and extract in a bowl of an electric mixer and beat until stiff peaks form.
  2. In a blender puree the berries with the yogurt and honey. Adjust the sweetness to taste. Set aside 1/3 cup of the puree.
  3. Fold the remaining berry mixture into the cream. Divide evenly into 6 small bowls or glasses.
  4. Drizzle a little of the puree on top and garnish with some more berries. Enjoy immediately or refrigerate if not using right away.
