Easy Chorizo Fried Rice

The other day Mexican chorizos were on sale at Whole Foods so we decided to stack up as we love it for breakfast and it’s also quite useful to flavor many other dishes whether Latin-inspired or not.

Originally, I wanted to make a breakfast dish with it that can easily be done on the stove top and not baked since it’s already starting to warm up and the use of the oven except on occasionally cooler days are now getting limited.

As with any plans, they easily change. Instead of making a breakfast/brunch chorizo dish I decided to make fried rice with it.

I cooked some rice the previous night and there’s still about 4 cups worth in the fridge waiting to be used and so the decision to make fried rice instead was pretty easy.

It’s a pretty simple recipe to make and quite handy to have as more often than not when you order Chinese for take-out, for example, chances are you’ll have some left-over rice (I am referring to steamed or boiled white rice here and not left-over fried rice).

Instead of throwing that away why not make it into another dish like this fried rice. You actually don’t need chorizos to make simple fried rice and I do have a classic fried rice recipe here if you want that instead.

But, if by chance, you also have some chorizos then make this one instead. It’s so easy and tasty and you can make it spicy if you like!

What are the INGREDIENTS for Easy Chorizo Fried Rice?

  • Oil – use your favorite cooking oil
  • Chorizo sausage links – Mexican or Filipino, casings removed.
  • Garlic cloves – peeled and minced.
  • Rice – day-old or left-over rice that’s been chilled/refrigerated previously.
  • Soy sauce – substitute with salt if preferred and adjust the amount to taste.
  • Corn kernels – use fresh or frozen (the latter for convenience and availability).
  • Green Peas – use fresh or frozen (the latter for convenience and availability).
  • Cilantro leaves – for garnish, chopped.
  • Hot sauce – for some spicy kick(optional).

How do you make Easy Chorizo Fried Rice?

  1. Heat the oil on medium in a wok or large frying pan. Saute the chorizos until cooked. Crumble the meat as you cook it.
  2. Add the minced garlic and continue to cook for another minute.
  3. Add the cold rice, separating the grains as you cook by stirring. Pour the soy sauce. You can also use salt if you’re allergic to soy sauce. Continue to stir until everything is combined and the rice is heated through.
  4. Add the frozen peas and corn and continue to stir until they are cooked. Taste the rice to check the seasoning and adjust if needed by adding more soy sauce or salt. You can also add a few drops of your favorite hot sauce to give it a spicy kick.
  5. Garnish with some chopped cilantro. Serve immediately. Enjoy!

Ingredients
 

  • 1 tbsp oil
  • ½ pound about 3 links Mexican Chorizo or Filipino chorizo de Bilbao, casings removed

  • 3 cups up to 4 cups day old refrigerated or chilled rice, use left-over rice if available
  • 1 tbsp soy sauce or salt, to taste
  • ½ cup frozen corn kernels
  • ½ cup frozen green peas
  • A bunch of cilantro leaves, chopped, for garnish (optional)
  • A few drops of hot sauce (optional)

TIPS & TRICKS
Instead of removing the sausages from their casing, you can also simply slice each diagonally.

    Abby, I love fried rice and make it often (as you do) when we've had an Asian meal the night before and have leftover rice. I've got some chorizo in the freezer (same as you, when Whole Foods had it on sale) and now that you mention it, that would be a great addition to the next batch of fried rice. #greatmindsthinkingalike 🙂
