I love no-bake desserts in summer especially this particular summer when we experienced quite a heat wave with temperatures in the upper 90s and a heat index of over 100 F. I am from the Philippines so I should be used to this muggy weather, I know, but trust me, even I didn’t enjoy it a bit!

Thankfully, there are many sweet treats to enjoy this summer and to help us cool down, too. Certainly, this Millionaire Pie is one of them!

I discovered this classic pie when I was looking for a no-bake dessert to feature on our 30-Day Challenge and also to serve on our church potluck.

I didn’t get the chance to feature this yummy pie earlier as our readers in an online vote on our page chose the strawberry pie to be posted ahead. But, I promised them that before summer ends, the recipe for Millionaire Pie will follow. So, here it is.

As you can see, it is totally loaded with yumminess – crushed pineapple, cream cheese and then pecans! How you can go wrong with such a combo? And it takes no longer than 15 minutes to make especially if you use a store-bought graham cracker crust.

Most, of all it’s no-bake and when the temps go as high as 100 F you certainly wouldn’t want to turn on the oven even to make a dessert!

It was so good that after tasting the first one, I decided to make another one! The pie sets really well so it’s not a pain to slice which makes this a true winner in my book!

WHAT MAKES THIS PIE DIFFERENT FROM OTHER VERSIONS OF MILLIONAIRE PIE?

If you’ve seen other millionaire pie versions, you’d at once notice that they have a more pinkish hue. That’s because they include maraschino cherries in the pie itself. This version doesn’t have that.

In my opinion, this version doesn’t require the addition of cherries. It stands on its own and is actually perfectly delicious and not overly sweet. Just the perfect balance of cheesy, sweety, goodness!

I have tried adding cherries and because this recipe as written doesn’t have lemon juice, it turned out too sweet for my liking. If you wish to add cherries make sure to balance it out with a little bit of lemon juice so the sweet element doesn’t overpower.

This recipe as well does not use condensed milk but simply a little bit of sugar and that’s enough. I tend not to like overly sweet desserts so this combination is perfect for me. You can adjust the sugar if you like. I also use unsweetened shredded coconut but if you cannot find that slightly sweetened coconut shouldn’t make too much of a difference. It wouldn’t make it too sweet – still perfect.

Having said all that, I’m hoping to add the condensed milk version of this amazing millionaire pie complete with cherries next time as it sure looks festive and is perfect for the holidays!

WHAT ARE THE INGREDIENTS FOR MILLIONAIRE PIE?

  • 1 store-bought or homemade Graham Cracker Crust
  • 8 oz block of cream cheese – get a good quality one like Philadelphia
  • 1/2 cup sugar
  • 8 oz can or 1 cup crushed pineapple
  • 1 cup shredded or desiccated coconut – unsweetened works better for me so it’s not too sweet
  • 1 cup chopped toasted pecans – provide the extra crunch and texture
  • 2 cups heavy cream whipped until stiff peaks form and sweetened with 1/4 cup of sugar – freshly whipped cream is BEST to use here.

Simply assemble the topping on top of the prepared graham crust then chill until set! That’s it! Crazy easy, right? Believe me, it’s super yummy, too!

HOW TO MAKE MILLIONAIRE PIE?

Prepare the graham cracker crust if not using a pre-made one and chill in the refrigerator while making the filling. You can use the recipe here for graham cracker crust.

Using an electric mixer, whip together the softened cream cheese and sugar until smooth and well-blended, about 4 minutes.

Stir into the cream cheese mixture the crushed pineapple, grated coconut, and pecans. Mix well. Set aside.

Make the whipped cream. To whip the heavy cream, place the cream in the bowl of an electric mixer and beat until it begins to thicken. Slowly add the sugar and continue to beat until stiff peaks form.  Fold in gently half of the whipped cream (reserving the other half as a topping) and stir everything carefully until evenly mixed. Spoon the filling into the prepared graham cracker crust.

Top the filling with the remaining whipped cream or cool whip and spread it all over. Sprinkle the pie with extra pecans.

Ingredients
 

  • 1 store-bought or homemade Graham Cracker Crust
  • 8 oz block of cream cheese, softened

  • 1 cup chopped pecans, reserve a few extra for garnish
  • 2 cups whipping or heavy cream, whipped until stiff peaks form and sweetened with 1/4 cup of sugar

Instructions

Notes

TIPS & TRICKS
Find the recipe here for graham cracker crust.
Personally, I prefer this version without maraschino cherries (though some or most versions of millionaire pie include it).  I think it tastes better without it and doesn’t become too sweet. For the holiday season though you can add just enough to give it a more festive look. Do not overdo the addition of the cherries as they’d be too sweet.
To avoid using 2 mixing bowls (or having to wash) in making the pie filling, simply whip the cream first. Transfer the whipped cream to another bowl and chill in the refrigerator while you’re making the rest of the pie filling. You can use the same mixing bowl where the cream was whipped without washing it first in making the rest of the pie filling.

      1 cup dried shredded or dessicated Coconut, unsweetened (unless you want it sweeter). I used the unsweetened one but if you want it sweeter then you can use the sweetened one. Enjoy!

    Years ago, I had this pie at a Potluck dinner. I just prepared one a few moments ago. It's chillin' in the refrigerator now. I hope my Husband will enjoy the surprise dessert and be delighted, as much as I have come to love this dessert.

    I ended up making this twice in one week ☺️. It was easy to make and so yummy. I used sweetened coconut, I couldn’t find the unsweetened ones. To me, it didn’t come out to sweet. The second time, I didn’t put the pecans. My friend doesn’t like nuts. It was delicious as well. Thanks for the recipe.

          I made this for my boyfriend that is diabetic. I used monkfruit as the sweetener, 1/3 less fat cream cheese, unsweetened coconut and pineapple and instead of whipped cream I did an 8 oz container sugar free cool whip. We all loved it!

    It’s chilling in the fridge right now. The filling tasted delightful after everything was mixed together. I bought a pecan pie crust instead of Graham cracker crust to use. I used chopped fresh pineapples instead of canned and extracted a little juice. I also toasted my unsweetened coconut for another level of flavor. Topped it with pecans and a little of toasted coconut. It’s beautiful and I can’t wait to cut into it.

      You can try banana or mango puree if you like but it won’t taste the same. I haven’t done it with any other fruit. If you just don’t like the taste of pineapple – let me assure you – it’s not very pineapple forward but a good balance of flavors with the cream cheese, coconuts, pecans and whipped cream thrown in. It’s so delicious!

      It’s perfectly fine. It’s just the whipped cream but once you taste it you’ll see it’s just right. I wouldn’t have it any other way.

      It won’t set up as nicely as the whipping cream so I personally use the heavy cream instead but it’s up to you.
