This NO BAKE refrigerator cake is super easy to make and can be personalized. Use your favorite chocolate, fruits, and nuts, mix and then chill! Perfect treat for the holidays!
Whenever we visit England you can be sure we enjoy the yummy sweet treats we don’t often get or make stateside. Oh boy, we load ourselves with victoria sponge cakes, scones with clotted cream, trifles, and anything with chocolate and all naturally enjoyed with a cup of tea!
One of my favorite yummy treats from England is Chocolate Tiffin. It is so delicious and quite more-ish to be honest. I love that it’s so popular you can find it anywhere.
In fact, the first time I ever tasted tiffin was at a gas station in a service plaza. Perhaps it was the Belgian chocolate allegedly used in these particular bars that made me truly love it.
I don’t know, I just knew then that my taste buds sang when I had a taste of the chocolate bars loaded with fruits and nuts!
At first, I thought it was hard to make them but when Janet, my hubby’s maternal aunt, told me they were actually no-bake and a simple mix and chill kind of recipe I was blown away.
Something so yummy can be that easy to make? Yes, indeed!! Last summer, I made a batch that the whole family loved especially hubby and myself.
What I love about this yummy treat is that it’s customizable to one’s tastes and preferences.
You can use digestives or graham crackers as a biscuit base then add your favorite nuts and dried fruits.
I added some pecans and used raisins (and a little bit of apricot) for these bars. For the holidays I can add some cranberries for that sweet-tangy contrast and some pop of color.
So, have it your way! Enjoy these delightful no-bake goodies!

- ½ cup Butter, use salted for that extra layer of flavor
- 2 tbsp Maple or Golden/Sugar Cane Syrup (sugar syrup is more traditional for this so use it if possible)
- 4 oz Chocolate, dark (use milk chocolate if you prefer it sweeter)
- 10 pieces Graham Crackers (or Digestive biscuits), crushed into pieces
- 1/2 cup Pecans or other nuts, roasted
- 1/2 cup Raisins or dried Cranberries,
- 1/2 cup Dried Apricots, chopped
- 4 oz Milk Chocolate (for topping)
Grease and line an 8-inch square baking dish with parchment paper or cling film.
In a small pan and over low heat, melt the butter, sugar syrup and dark chocolate. Cook, stirring, until everything is blended.
Into the melted chocolate mixture, stir in the crushed biscuits, dried fruits and nuts.
Spoon the mixture into the prepared dish. Melt the remaining milk chocolate over low heat in the stovetop or in the microwave. Pour all over spreading the chocolate evenly. Chill for at least 3-4 hours or until set. Let the tiffin reach room temperature before cutting into squares. Enjoy!
