We had a lot of snow this past week and as I write it’s still a few inches on the ground and according to the weather prediction there will be more dumping come Sunday afternoon!

I can’t really complain because this winter has been particularly mild and hasn’t really snowed a lot until a few days ago.

However, since the car was left on the driveway in the middle of the snow storm and the fact that our driveway inclines upwards towards the road – that meant we were stuck for the last couple of days at home.

It wasn’t at all a lost cause though because I got the chance to spend more time with my kids as they had two snow days! Yay for that. So we watched a couple of movies – once each day and also I did a lot of cooking (and yes, I finished my laundry, too! Woohoo!).

I thought to myself – what would be the best food to have on a cold winter’s day? Now, that reminded me of what food we ate in the Philippines when it’s rainy and gloomy (thankfully, no snow there at all!!).

Certainly, it was something sweet and chocolaty — best way to drive the blues away!

I am talking about a steaming hot bowl of Champorado (chocolate rice porridge – when you have it for breakfast or pudding – when you have it for dessert!!). I had some sticky rice in the cupboard and thankfully, some cocoa powder to go with. This version is certainly not your typical champorado.

I call it the ultimate version because it uses not just plain water but coconut milk to give it that extra creamy yumminess and then mixed in with chocolate chips at the end for that unforgettable chocolate flavor!!

It is heaven in a bowl, indeed. You can serve this in the morning for breakfast – simply add extra milk because it is quite thick but for dessert – serve as is but slightly warmed-up then top with a dollop of vanilla ice cream!! It is truly yummy! Completely, gluten-free as well!

Ultimate Slow Cooker Chocolate Rice Pudding (Champorado)

Sticky rice cooked in coconut milk and chocolate. This chocolate rice pudding is the ultimate breakfast sweet treat or when served with ice cream – a truly yummy dessert – Champorado!

 

Ingredients

  • 2 cups white glutinous or sticky Rice
  • 1/2 cup unsweetened Cocoa powder
  • 3 cups Water
  • 1 (12 oz.) can Evaporated Milk
  • 1 (14 oz) can Coconut Milk
  • 1/2 cup brown Sugar
  • 1/2 cup Chocolate Chips

 

Instructions

  1. Wash and drain the rice well. Place in the slow cooker and mix with the unsweetened cocoa powder. Pour in the water and stir. Cook on high for 2 hours or until the liquid has mostly dried up and the rice is tender.
  2. Pour in the evaporated milk and coconut milk. Stir. Add the brown sugar and chocolate chips, Stir until everything is combined and the color is even. Continue to cook for another 30 minutes to an hour or until fully heated through. If it’s too thick simply dilute with a little water or milk. Serve immediately. Top with some vanilla ice cream for dessert!

Yield: 8-10 Servings
Prep Time: 5 Minutes
Cooking Time: 3 Hours on high
Total Time: 3 Hours and 5 Minutes

    OMG I haven't had champorado in years. We had a snowstorm over the weekend and we did think about making some but we didn't have rice! Love how you use cocoa powder. We have some tablea at home, methinks cocoa powder is easier to work with 🙂

      Use tablea if you have some, I don't have it so I had to be creative and use the cocoa powder!! I agree this is the best comfort food for winter!! Thanks!

    Can you use almond milk instead of coconut milk?

      If you want to be authentic it’s coconut or regular milk but you can certainly try almond but it won’t taste the same. I don’t know because I haven’t tried it that way. Let us know. Thanks!
