Unbelievably yummy and so easy to make this mango pesto packs a lot of flavors! The sweet-tart fruitiness of fresh mangoes perfectly blends with the savoriness of pesto!
In a food processor, puree the basil, nut of choice, garlic, mango and salt. With the machine running, slowly pour in the olive oil. Stir in the parmesan. Taste and adjust seasoning.
Serve with spaghetti, if desired.
Note: Use one garlic, if you prefer a mild garlic taste. Keep in the refrigerator (best used within 3 days), if there are leftovers.
