Mango Pesto

Unbelievably yummy and so easy to make this mango pesto packs a lot of flavors!  The sweet-tart fruitiness of fresh mangoes perfectly blends with the savoriness of pesto!

  • 4 oz fresh basil
  • 1/2 cup toasted pine nuts, walnuts or almonds
  • 1-2 cloves garlic
  • 1 cup mango, or to taste
  • 3/4 tsp salt, or to taste
  • 1/2 cup olive oil
  • 1/2 cup parmesan cheese, or to taste
  • 1 lb spaghetti, cooked


  1. In a food processor, puree the basil, nut of choice, garlic, mango and salt. With the machine running, slowly pour in the olive oil. Stir in the parmesan. Taste and adjust seasoning.

  2. Serve with spaghetti, if desired.

Recipe Notes

Note: Use one garlic, if you prefer a mild garlic taste. Keep in the refrigerator (best used within 3 days), if there are leftovers.
