Kids and adults will both love these tried and tested delicious and healthier Homemade Chicken Nuggets. Regular and gluten-free options here, too. Both are equally yummy!
1/2cupItalian bread crumbs or 1/2 cup ground almonds or gluten-free bread crumbs for gluten-free version
3Tbspgrated parmesan cheese
2Tbspdried parsley flakes
1/2tsppowdered garlic
1/2tsppaprika,
1/2tspsaltor to taste
1lbchicken breasts (about 2-3 pieces), cut into cubes (bite-size nuggets)
Instructions
Preheat oven to 400 F (200 C). In a shallow baking dish or sheet pan, place the butter, oil and garlic. Transfer the pan to the oven and allow the butter and oil to melt as the oven heats up.
As the oven heats up, prepare the chicken.
Place the dry ingredients (bread crumbs or ground almonds [or gluten-free bread crumbs]), parmesan cheese, parsley, powdered garlic, paprika, and salt) in a large bowl. Mix.
Add the chicken and coat with the mix. Alternatively, you may place the chicken with the dry ingredients in a large clear plastic bag. Shake until the chicken parts are fully coated.
Take the sheet pan or baking dish out of the oven. Add chicken and coat with the garlic -butter sauce.
Return the pan to the oven. Bake for about 20 minutes or until chicken is tender and fully cooked.
Enjoy with rice, of course! We serve it with a homemade and very simple dipping sauce made from ketchup and mayo.
