Colorful Ham Strata

Loaded with ham, red and green peppers, bread, onion, and cheese, this super tasty and colorful ham strata is pleasing both to the eye and palate! It's make-ahead, too so simply pop it in the oven for a delicious hot breakfast!

Ingredients
 

  • 1 tbsp cooking oil of choice
  • 1 large onion, diced
  • ¾ cup each green and red sweet pepper, julienned or cubed
  • 16 oz sourdough loaf (or French bread), cut into cubes
  • 2 cups cooked ham, cubed
  • 1 cup cheddar cheese (yellow or white)
  • 6 large eggs
  • 2 cups milk
  • ¾ tsp salt
  • ½ tsp freshly ground black pepper

Instructions
 

  • Heat oil over medium-high heat in a large skillet. Saute onions and peppers until tender about 5 minutes. Season lightly with just a pinch of salt.
  • Place half the bread cubes in a greased 9x13 baking dish. Sprinkle with half of the following: sauteed onions and peppers, ham, and cheese. Repeat layers.
  • In a bowl, whisk together eggs, milk, salt, and pepper. Pour over the bread mixture. Cover and refrigerat overnight.
  • Remove the dish from the refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until a knife inserted in the center comes out clean, 30-35 minutes. Let sit for 10 minutes before cutting into squares and serving.
