This is the only way we make delicious ground beef tacos! Quick and easy to make and doesn't require long cooking yet it packs in a lot of flavor. Such an easy option for busy weeknights, light lunch, or simply for snacking. A favorite family recipe!
Heat oil. Saute garlic briefly until aromatic, just a few seconds. Add the beef, and crumble with a fork as you brown it. Add the chopped onion and cook until soft about 5 minutes.
Stir in the tomato paste, chili powder, cumin, paprika, and coriander; season with salt and pepper. Adjust heat to low and simmer for about 10-15 minutes stirring occasionally to allow flavors to infuse. Remove from the heat and transfer to a serving plate.
To serve, spoon the filling onto tortillas, and top with some salsa or plain diced tomatoes, shredded lettuce, sour cream or cheese, and some chopped fresh cilantro, if desired. For the adult, add a few drops of hot sauce for some added kick!
