½poundabout 3 links Mexican Chorizo or Filipino chorizo de Bilbao,casings removed
3clovesgarlic,peeled and minced
3cupsup to 4 cups day old refrigerated or chilled rice,use left-over rice if available
1tbspsoy sauce or salt, to taste
½cupfrozen corn kernels
½cupfrozen green peas
A bunch of cilantro leaves, chopped, for garnish (optional)
A few drops of hot sauce(optional)
Instructions
Heat the oil on medium in a wok or large frying pan. Saute the chorizos until cooked. Crumble the meat as you cook it.
Add the minced garlic and continue to cook for another minute.
Add the cold rice, separating the grains as you cook by stirring. Pour the soy sauce. You can also use salt if you’re allergic to soy sauce. Continue to stir until everything is combined and the rice is heated through.
Add the frozen peas and corn and continue to stir until they are cooked. Taste the rice to check the seasoning and adjust if needed by adding more soy sauce or salt. You can also add a few drops of your favorite hot sauce to give it a spicy kick.
Garnish with some chopped cilantro. Serve immediately. Enjoy!

TIPS & TRICKSInstead of removing the sausages from their casing, you can also simply slice each diagonally.
