Ingredients
 

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons salted butter, melted

For the Filling:

  • 2 cans (14 oz) each sweetened condensed milk
  • 6 large egg yolks
  • 1 cup key lime juice, fresh or bottled
  • 1 teaspoon lime zest optional, for extra flavor

Instructions
 

Preheat & Prepare Pan:

  • Preheat the oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving an overhang for easy removal.

Make the Crust:

  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until evenly combined. Press the mixture firmly into the bottom of the prepared pan. Bake for 8-10 minutes until lightly golden. Let cool slightly.

Prepare the Filling:

  • In a large bowl, whisk together the sweetened condensed milk, egg yolks, key lime juice, and lime zest (if using) until smooth and fully incorporated.

Bake:

  • Pour the filling over the crust and spread evenly. Bake for 20-25 minutes, or until the filling is just set and has a slight jiggle in the center.

Chill:

  • Remove from the oven and let the bars cool to room temperature. Then, refrigerate for at least 2 hours (or overnight) until fully set.

Serve:

  • Lift the bars out of the pan using the parchment paper. Slice into squares and serve chilled. Optionally, top with slightly sweetened whipped cream and additional lime zest before serving.

Notes

Tips and Tricks:
Key Lime vs. Regular Lime: If key limes aren’t available, you can use regular lime juice with a little lemon juice for a similar flavor. *
Storage: Keep leftovers in an airtight container in the refrigerator for up to 5 days.
