Easy Master Formula for Muffins

Tried and tested delicious master recipe for muffins. Add your favorite fruits and throw in some chocolate, too! This formula works and always comes out moist and yummy! No need for any mixer.

Ingredients
 

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup sugar, you can use either white or brown or a mix of the two - I used half of each
  • 1 cup (8 oz) yogurt or Sour Cream
  • 1/3 cup oil, vegetable or coconut
  • 1 teaspoon vanilla extract
  • 1 1/3 cups fresh fruit of your choice, chopped (ex. strawberries, raspberries, cranberries, etc.)
  • 3/4-1 cup white or regular chocolate chips, optional

Instructions
 

  • Preheat oven to 400F/200C. Line a 12-muffin pan with paper cups or muffin liners.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt. Set aside. In another bowl beat the eggs. Add the sugar, yogurt (or sour cream), oil, and vanilla extract to the beaten eggs and mix.
  • Mix the wet and dry ingredients until combined. Fold in the fruits and the chocolate chips, if using.
  • Spoon the mixture into the prepared muffin pan dividing it equally. Bake for about 18-22 minutes or until a tester comes out clean.
  • Remove from the oven and after about 5-8 minutes (when it's cool enough to handle) transfer each muffin to a wire rack to cool completely. Enjoy!

Notes

Tips and Tricks
You can also choose to bake the muffins at 375F. That works, too.
