Easy Rhubarb Dream Bars

These easy rhubarb dream bars combine a delicious buttery shortbread crust with a luscious rhubarb topping that will have you dreaming about it all day long. With just few a ingredients this recipe achieves the perfect balance of sweet and tangy that makes it so crave-worthy. A yummy way to use up all that spring rhubarb! Ingredients
 

For the Crust

  • 1 cup butter, salted
  • 2 cup all purpose flour
  • ¾ cup powdered sugar

For the Filling

  • 4 large eggs
  • 2 cups granulated white sugar
  • ½ cup all-purpose flour
  • ½ tsp. salt
  • 4 cups rhubarb, diced

Instructions
 

  • Preheat the oven to  350° F.
  • Melt the butter and mix with the flour and powdered sugar.
  • Press into a 9 x 13 pan.
  • Bake in the preheated oven for 10 minutes. Take it out of the oven.
  • In a large bowl, beat the eggs and slowly add the sugar, flour, and salt.
  • Fold in the diced rhubarb.
  • Pour on top of the crust and bake for another 45 minutes or until set and nicely browned on top. Allow to cool completely before cutting into bars for easier slicing.
