Ingredients
 

  • 1 pound boneless skinless chicken breasts or thighs, cut into 1-inch pieces
  • cup teriyaki sauce, divided
  • 1/2 tablespoons cornstarch
  • 1 tablespoon peanut or vegetable oil
  • 4 cloves garlic, minced
  • 1 1/2 tablespoons freshly grated ginger
  • 2 stalks green onions, cut into ½-inch slices
  • 1/3 cup roasted cashew nuts, optional
  • 1 tablespoon sesame seeds, toasted
  • 1 teaspoon dark sesame oil

Instructions
 

  • Combine chicken and ⅓ cup teriyaki sauce in medium bowl; toss to coat. Marinate for 15 to 20 minutes.
  • Drain chicken discarding the marinade. Mix the remaining ⅓ cup teriyaki sauce and cornstarch in small bowl until smooth.
  • Heat oil in wok or large skillet over medium-high heat. Add the garlic and ginger and cook just until aromatic (under 30 seconds).
  • Add the marinated chicken and stir-fry 3-4 minutes until chicken is cooked through. Pour in the cornstarch mixture. Cook and stir 1 minute or until sauce boils and thickens.
  • Quickly stir in green onions, sesame seeds and cashew nuts, if using. Turn off the heat and drizzle the sesame oil. Give it a final quick stir. Serve immediately with rice on the side.

Notes

Tips:
To toast sesame seeds, spread them in a small skillet. Dry fry over medium-low heat for 3 minutes or until the seeds begin to pop and turn golden. You can also purchase pre-toasted sesame seeds.
