1poundboneless skinless chicken breasts or thighs,cut into 1-inch pieces
⅔cupteriyaki sauce,divided
1/2tablespoonscornstarch
1tablespoonpeanut or vegetable oil
4clovesgarlic,minced
1 1/2tablespoonsfreshly grated ginger
2stalksgreen onions,cut into ½-inch slices
1/3cuproasted cashew nuts,optional
1tablespoonsesame seeds,toasted
1teaspoondark sesame oil
Instructions
Combine chicken and ⅓ cup teriyaki sauce in medium bowl; toss to coat. Marinate for 15 to 20 minutes.
Drain chicken discarding the marinade. Mix the remaining ⅓ cup teriyaki sauce and cornstarch in small bowl until smooth.
Heat oil in wok or large skillet over medium-high heat. Add the garlic and ginger and cook just until aromatic (under 30 seconds).
Add the marinated chicken and stir-fry 3-4 minutes until chicken is cooked through. Pour in the cornstarch mixture. Cook and stir 1 minute or until sauce boils and thickens.
Quickly stir in green onions, sesame seeds and cashew nuts, if using. Turn off the heat and drizzle the sesame oil. Give it a final quick stir. Serve immediately with rice on the side.
Notes
Tips:To toast sesame seeds, spread them in a small skillet. Dry fry over medium-low heat for 3 minutes or until the seeds begin to pop and turn golden. You can also purchase pre-toasted sesame seeds.
