Instructions
Place the flour and eggs into a medium-sized bowl and using an electric mixer beat for about 1-2 minutes.
Gradually pour in the milk and granulated sugar and mix until the consistency is smooth. Let the batter rest for about 20-30 minutes at room temperature. This resting time allows the gluten to relax and ensures a tender crepe.
Preheat a 9” non-stick pan or griddle to medium heat. Use a cooking spray, or drizzle a little bit of oil into the pan. Once the pan is heated through, pour the batter (about 1/4 cup) evenly over the pan. Once you pour the batter into the pan, immediately lift and tilt the pan in a circular motion to spread the batter evenly across the bottom. This will help create a thin and uniform crepe.
Cook until bubbles form then carefully flip and cook for 1 minute or until golden brown.
Fill your crepes with jam, cream cheese, peanut butter, honey, Nutella, or whipped cream. They are also delicious on their own. Serve hot with powdered sugar and fruits of your choice. These crepes taste best with sliced fruits, powdered sugar, or whipped cream.
