One Bowl Yummy Pumpkin Muffins

Ingredients
 

  • 3 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon ground Cinnamon
  • 1 teaspoon ground Nutmeg
  • 1/2 teaspoon Salt
  • 2 cups Pumpkin puree
  • 1 1/3 cup Sugar
  • 3 Eggs, lightly beaten
  • 3/4 cup Oil, vegetable or other neutral-flavored oil
  • 1 1/2 cups White Chocolate Chips or your favorite baking chips

Instructions
 

  • Preheat the oven to 375 F. Line two 12-cup muffin pans with cupcake liners.
  • In a large mixing bowl, whisk together the flour, baking soda, baking powder, ground Cinnamon, ground Nutmeg and salt. Add the pumpkin puree, sugar, eggs, and oil. Gently mix everything just until combined. Fold in the baking chips (chocolate, peanut butter or butterscotch chips - your choice).
  • Using an ice cream scoop, spoon the batter into the prepared muffins pans distributing them evenly. Bake in the preheated oven for 18-20 minutes or until a tester inserted in the center of the muffin comes out clean. Let cool in the pan for about 5 minutes and then transfer to a wire rack to cool completely. Enjoy warm or room temperature!
