Instructions
Place 2 cups of the chocolate chips and whipping cream into a bowl. Next, microwave the mixture in 30 second increments, stirring between each one until smooth.
Blend the freeze-dried raspberries until they're fully crushed, then add them into the melted chocolate. Use a cookie scoop to portion out the truffle batter. Next, use your hands to shape the batter into a ball shape about the size of a walnut.
In a clean bowl, melt the rest of the chocolate chips until smooth. Dip each truffle into the melted chocolate and sprinkle it with crushed raspberries on top.
