Ingredients
 

For the Pork Topping

  • 1 ½ lb pork tenderloin, cut into 1 inch piece
  • ½ teaspoon sea salt, or to taste
  • ½ teaspoon ground black pepper or to taste
  • ¼ cup cornstarch
  • 2 tablespoons oil of choice, plus a little extra for greasing pan
  • 8 oz small pineapple, cut in cubes
  • 1 cup cashew nuts

For the Ginger Sauce

  • 1 teaspoon cornstarch
  • cup low sodium soy sauce
  • 2 tablespoons honey, or to taste
  • 1 ½ tablespoons minced or freshly grated ginger
  • 1 tablespoon chili paste, or to taste

Serve with

  • Steamed rice
  • ¼ cup green onion, chopped, for garnish
  • 1 tablespoon sesame, for garnish

Instructions
 

  • Preheat the oven to 400 F | 200 C. Grease a sheet pan with oil.

For the Pork Topping

  • In a large bowl, add pork, salt and pepper. Toss. Sprinkle cornstarch little by little and mix until well coated. Drizzle oil and mix again.
  • Transfer pork on the sheet pan. Bake for 10 minutes then open the oven. Carefully add the pineapple and cashew nuts into the pan. Bake for another 10 minutes or until pork is done.

For the Ginger Sauce

  • Add cornstarch in a bowl, pour soy sauce in it while stirring. Now stir in ginger and chili paste. Pour on the pork and toss all together. Bake for another 3-4 minutes.
  • Remove and serve with rice. Garnish with green onion and sesame.
