Instructions
Make the seasoning sauce ahead. In a small bowl, mix 2 tablespoons of oyster sauce, 1 tablespoon of fish sauce, 1 tablespoon soy sauce and 2 tablespoon of sugar plus the grated ginger. Stir until the sugar is dissolved. Adjust the sauce to taste, if desired.
Heat a tablespoon of cooking oil in a large pan or wok over medium-high heat. Add the minced garlic to the pan. Sauté for about 30 seconds until fragrant.
Add the sliced Thai red chilis or Fresno chili peppers to the pan and stir-fry for another minute.
Add the ground beef to the pan and cook it until it's no longer pink, breaking it into small pieces as it cooks. This usually takes about 5-8 minutes.
Pour the sauce mixture over the cooked beef and stir to combine. Let it cook for a couple of minutes to allow the flavors to meld and the sauce to be fully absorbed.
Turn-off the heat add the Thai basil leaves to the pan. Stir them in until they wilt and release their aromatic fragrance. This doesn’t take long.
Taste the dish and adjust the seasoning with more sugar, fish sauce, or chili peppers to suit your preferences. Serve your Pad Krapow hot over a bed of steamed jasmine rice with fried egg on the side. Enjoy the vibrant flavors!

TIPS & TRICKSSometimes, I brown the beef first then add the garlic and chilies as the photo above shows. You can do it however you want to. I also add some green onions, if I have them at hand. The latter is optional.If you don’t like it too spicy simply add the chilis with the sauce and just cook it briefly until the meat is coated with sauce.
