Turkey, Brie and Cranberry Grilled Sandwich

This sandwich tastes like a delicious Thanksgiving meal all over again! Nothing is wasted from Thanksgiving dinner when you make this easy to follow recipe for a serious turkey, brie and cranberry grilled sandwich using all your leftovers! You can also substitute turkey with cooked chicken, if that is available instead.

Ingredients
 

  • 1 loaf Ciabatta bread, sliced into 3 pieces
  • Butter, for brushing
  • Turkey Breast, sliced (use leftover turkey if available) or replace with cooked chicken
  • Cranberry dressing or sauce, as needed
  • 3 oz Brie
  • Mashed potatoes, as needed
  • Lettuce leaves, as needed

Instructions
 

  • Slice the ciabatta horizontally and then vertically in about 3 sections.
  • Layer the sandwich with turkey slices, cranberry sauce, brie, mashed potatoes, and lettuce leaves. The lettuce can be added before or after grilling, depending on the type of lettuce leaves you wish to use.
  • Brush butter or olive oil on each side of the sandwich exterior/crust. Toast on a preheated sandwich grill or cast iron skillet, pressing firmly on each side until golden brown and heated thoroughly.
  • Alternatively, toast the bread slices in melted oil or butter, then layer the Thanksgiving leftovers between the slices as instructed above. Sometimes I do the sandwich this way and heat the mashed potatoes and cheese (for the latter to soften and melt a little) before adding them to the sandwich. Enjoy! It's absolutely yummy!
