6cupswatermelon chunks,(you can use 1 small/ medium sized watermelon or half of a large one)
6ouncesfeta cheese,crumbled (adjust amount to taste)
1English cucumber,cut-up (you may also use the smaller Persian cucumbers)
1small red onion,thinly sliced, (optional)
1shallot,for garnish (optional)
1/3cupmint leaves,thinly sliced or kept whole if small in size
1cuplettuce of your choice,shredded or chopped
1/2lemon, juiced (use as dressing - adjust amount to taste)
2tablespoonsolive oil,or to taste
Salt and pepper,to taste
Instructions
Peel and cut the watermelon and cucumber into small bite size chunks, place both in a large bowl.
Slice the red onion thinly (if using) and toss it all together.
Cut the feta into small cubes (if in block form) then crumble half over the watermelon mixture. Add lettuce and mint leaves, toss lightly with the rest then crumble the remaining cheese all over.
Drizzle the extra-virgin olive oil and fresh lime juice over the salad. These citrusy and zesty flavors will enhance the overall taste.
Sprinkle some salt and pepper over the salad, adjusting the amount according to your preference. Remember that feta cheese is already salty, so be mindful of the amount of salt you add.
Garnish your salad with shallot halves (if using) and extra mint leaves. Toss and serve.
Notes
TIPS & TRICKSNOTE: I personally prefer to just use the lemon juice without the olive oil and seasoning because the salad is already fresh-tasting and delicious as is without any extra oil-based dressing. Feel free to add the olive oil and seasoning, if you prefer that.
