Yummy Baked Oatmeal

A tried and tested family favorite that can easily be doubled. The oatmeal taste is enhanced with cinnamon and other spices and when eaten with raisins or crunchy peanut butter, it’s like heaven in a bowl! Yummy baked oatmeal for a delicious gluten-free breakfast or brunch!

Ingredients
 

  • 2 cups rolled or old-fashioned oats
  • ½ cup dark brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg, optional
  • 1 pinch ground cloves, optional
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 egg, room temperature
  • 1/4 cup or (2 oz) half a stick of butter, melted
  • 1 teaspoon vanilla extra
  • Milk, for pouring

Instructions
 

  • Preheat the oven to 350F / 180 C. Mix all the ingredients and pour into a greased 9-inch square baking dish. Bake for about 30 minutes.
  • Take it out of the oven and then let it settle for about 3 mins (only because my family cannot wait longer than this!). Serve warm with milk and dried fruits, if desired. Raisins are particularly perfect for this!
  • In the summer we enjoy this with fresh berries!
