I have mentioned many times on the blog that in the Philippines we eat rice at least 3x a day! That’s a lot of rice. That means many left-overs sometimes. No worries. That’s good news. More often than not, we overcook so we have left-overs! You’re probably wondering, why? So we can make fried rice!!!
That’s no joke! I’ll tell you a secret – the best fried rice is rice made from chilled left-over rice! So for may family, it makes a lot of sense to cook more rice than needed so that we can use the left-over rice to make fried rice the next day. After all, the best breakfast in the Philippines is always breakfast with fried rice (aka as Sinangag!). You can have it with eggs, cured meat, sausages, ham and even seafood! It’s a win-win situation.
