I cannot believe that I’ve had this salad many times and yet I have failed to write a blog post about this. Sometimes, life gets in the way and other times memory loss, too. Haha. Thankfully, when we went to Michigan this summer, our friend who invited us over for dinner, made this delightful salad. I though to myself, it’s clear, I needed to make it again and soon!
What makes this salad so special? The ease in making it. The way it presents so beautifully. The accessible ingredients. Last but not the least, the crazy delicious flavors your tastebuds would enjoy in one bite!
Anyone, perhaps unfamiliar with this salad, would at first glance think it’s weird to have peaches, tomatoes and cheese together. But because it always looks so pretty no matter how you arrange this, one’s attention would always be captured and with that the thought – I wonder how this would actually taste?! One bite is all it takes and you’ll be convinced this is indeed one of the yummiest salads ever!
How can it not taste good? You get a yummy savory flavor from the mozarella, sweet-tart from the tomatoes, juicy sweetness from the peaches, hint of peppery goodness from the basil and all that contrasting with a tasty balsamic dressing (either reduced or simply uncooked). All these flavors work so well together and your palate would enjoy the many layers of contrasting tastes. Seriously addictive!

Easy Peach Caprese Salad
Such an easy, tasty and summer salad loaded with delightful flavors from fresh peaches, mozarella, basil, tomatoes and balsamic dressing! Perfect as appetizer, snack or a meal on its own.
Ingredients
- 8 oz fresh Mozzarella cheese, sliced
- 2 fresh, ripe Peaches , seed removed, sliced
- 2-3 pieces tomatoes on the vine, sliced
- 8-10 pieces small basil leaves,
- 1/2 cup Balsamic Vinegar, (use only 3-4 Tablespoons or to taste, if you don't wish to make a balsamic reduction)
- 2 tbsp extra virgin Olive Oil, or to taste
- 1 tsp Honey, optional
- 1/2 tsp Salt, or to taste
Instructions

On a platter that's perfect for serving, arrange the sliced mozzarella cheese, fresh peaches, tomatoes alternately. You can also simply throw them all together, too if in a hurry. Top with fresh basil leaves.

If doing a balsamic reduction, place the balsamic vinegar in a small saucepan then bring to a boil using medium heat. Once it starts to boil, adjust heat to medium low and allow to cook until thicken and reduced to about half, 8-10 minutes. Keep an eye as it cooks. Once done, mix with the olive oil, honey (if using) and salt. Adjust to taste. Drizzle on top of the salad just before serving.
Recipe Notes
For a shortcut, no need to make the balsamic reduction if pressed for time. Reduce the amount of balsamic vinegar to about 3 tablespoons and then mix with the remaining dressing ingredients. Adjust to taste. Drizzle before serving.
