It was just one of those nights when I needed to make dinner but I didn’t have enough time. Our fridge had a lot of food in it but it seemed that everything I thought of making required too much effort, lots of ingredients involved and quite a long cooking time, Making Filipino or Asian food was out of the question as that usually required a lot of prep time usually in the form of chopping vegetables. What was a mommy to do?
Thankfully, I saw these very brightly colored cheese tortellini in the corner which my little boy grabbed from the grocery the other day. He loves cheese tortellini and was fascinated with all its bright colors and asked me to buy a package. I acceded to his request knowing that one day it would be handy for dinner time.That night it seemed to be my best option.
Of course, I didn’t just want to boil these stuffed pasta in chicken broth as that would be too boring. This was when I thought of the pesto which I bought with the tortellinis. Perhaps a tablespoon or 2 of pesto would add some depth of flavor to the soup. And….yes, it did. It added a subtle herby taste which did not overwhelm but simply enhanced the flavor. Then serving it with a little bit of parmesan on the side – whether simply grated or made into crisps truly brought this soup to a higher level of deliciousness. Cheese Tortellini and Pesto Soup

This very tasty soup is a huge time saver and great for those busy nights! No chopping or extra prep required to make this Cheese Tortellini and Pesto Soup.
Ingredients
- 8 cups Chicken Broth
- Two 9-ounce packages refrigerated Cheese Tortellini
- 2 Tablespoons homemade or storebought Pesto, or to taste
- Ground Pepper, to taste
Instructions
- Pour the broth in a large deep pan and bring to a boil. Add the tortellini. Bring to a simmer and cook according to manufacturer’s instructions or until al dente.
- Stir in the pesto and season with freshly ground pepper, to taste. Ladle into bowls and serve immediately. Serve with some parmesan cheese on the side. Enjoy!

What a great easy supper! I love tortellini for that reason and I love that I can sneak spinach in and my kids don't know that it's there. I have the same problem as you when I walk into the kitchen looking for food and all I find are ingredients. Having a quick easy meal like this tortellini soup helps a working mom out greatly!

I didn’t want a tomato sauce for my tortellinis so I tried this recipe. I also added a pound of leftover roasted venison, 2 cups spinach, a can of rotel, and can of cannellini beans. And topped with shredded parm. Yum!
