Mango Pesto

Unbelievably yummy and so easy to make this mango pesto packs a lot of flavors!  The sweet-tart fruitiness of fresh mangoes perfectly blends with the savoriness of pesto!

Ingredients
 

  • 4 oz fresh basil
  • 1/2 cup toasted pine nuts, walnuts or almonds
  • 1-2 cloves garlic
  • 1 cup mango, or to taste
  • 3/4 tsp salt, or to taste
  • 1/2 cup olive oil
  • 1/2 cup parmesan cheese, or to taste
  • 1 lb spaghetti, cooked

Instructions
 

  • In a food processor, puree the basil, nut of choice, garlic, mango and salt. With the machine running, slowly pour in the olive oil. Stir in the parmesan. Taste and adjust seasoning.
  • Serve with spaghetti, if desired.

Notes

Note: Use one garlic, if you prefer a mild garlic taste. Keep in the refrigerator (best used within 3 days), if there are leftovers.
