Mango Pesto

Unbelievably yummy and so easy to make this mango pesto packs a lot of flavors!  The sweet-tart fruitiness of fresh mangoes perfectly blends with the savoriness of pesto.  Add to pasta and you have one tasty meal!

I would have never thought of adding fresh mangoes to a pesto dish!

My mom celebrated her 80th birthday last December (2019) so we threw her a party in the Philippines.  My family and I flew over just for this as it was a big milestone for her and our family. My sister, who organized the entire event, chose an organic and vegetarian restaurant to cater for mom’s party. She chose the entire menu and we didn’t have a clue as to what we’d be served. This was our first time to have a fully vegetarian birthday party as we often had meat dishes.

We were pleasantly surprised by how delicious the entire menu was from appetizers to dessert! This was actually the time when I got the chance to taste spaghetti with mango pesto as it was one of the dishes on offer. I was a bit skeptical as to how it would taste and even thought it a bit of an odd combination at first. But, just one taste of this pasta dish loaded with mango pesto and I was blown away. It was unbelievably yummy! The mango’s sweet-tart flavor did not distract or render unpleasant the taste of the dish. In fact, it elevated the pesto flavor and it was totally delish! After that, I told myself that I would re-create it one day.

Today’s that day! My family totally enjoyed our meal. They remembered the time they first tasted it at my mom’s birthday so they delightfully ate the whole thing! No left-overs at all!

The best thing about this pasta sauce is that it’s crazy easy to make. Takes about 5 minutes or less! How’s that for a quick dish?

All you need to do is pretty much combine everything in a food processor or blender and, voila, you have a delicious pasta sauce!

Mango Pesto

This mango pesto is quite versatile, too! It’s not just for use with pasta (which is delish, of course!). You can use it to make appetizers like a pesto crostini or even in making a low-carb breakfast or snack like my Roasted (Baked) Tomatoes with Pesto and Feta Cheese. The possibilities are endless, indeed!

Ingredients
 

  • 4 oz fresh basil
  • 1/2 cup toasted pine nuts, walnuts or almonds
  • 1-2 cloves garlic
  • 1 cup mango, or to taste
  • 3/4 tsp salt, or to taste
  • 1/2 cup olive oil
  • 1/2 cup parmesan cheese, or to taste
  • 1 lb spaghetti, cooked

Instructions
 

  • In a food processor, puree the basil, nut of choice, garlic, mango and salt. With the machine running, slowly pour in the olive oil. Stir in the parmesan. Taste and adjust seasoning.
  • Serve with spaghetti, if desired.

Notes

Note: Use one garlic, if you prefer a mild garlic taste. Keep in the refrigerator (best used within 3 days), if there are leftovers.
