Preheat oven to 350°F. Line a 9x13 baking pan with parchment paper.
In a small bowl, stir together cinnamon and sugar for the topping. Set aside.
In a large bowl, whisk together flour, cream of tartar, baking soda, and salt.
In a separate large mixing bowl, cream butter, brown sugar, and granulated sugar with a hand mixer until light and fluffy.
Mix in apple butter, eggs, and vanilla extract.
Add in flour mixture a little at a time mixing on low until just combined, scraping down the sides as needed.
Level cookie dough into the pan. Sprinkle on sugar cinnamon topping.
Bake 20-25 minutes until the top is golden brown and the edges are set.
Cool in the pan. After the bars are completely cool, cut into 16 bars and serve.

TIPS & TRICKS
Don’t skip the cream of tartar. It’s what gives snickerdoodles their unique flavor.
Cream of tartar can be found with the seasonings in most stores.
The snickerdoodle bars can be baked in a glass baking dish, but they will take longer to bake.
The dough is thick, like a lot of cookie doughs. It’s easiest to spread if you add the dough to the pan in 3 parts – middle and both sides – then gently spreading it out with an offset spatula or by using a piece of parchment paper to press it down and out with your hands.
VARIATIONS
If you like, a little cinnamon or ginger can be added to the Snickerdoodle Bars dough.
These bars can also be topped with a sugar glaze, frosting, or caramel sauce.
Crushed nuts, such as pecans or walnuts, could can also be added to the top.
