2large Fuji apples,roughly chopped (or 3 small apples)
4garlic cloves,crushed and peeled
1 ½teaspoondried thyme
1tablespoontomato paste
1teaspoonapple cider vinegar
1tablespoonbrown sugar

Instructions
Season pork chop with salt and pepper, to taste.
Heat a large skillet on medium heat. Sear pork chops on both sides for 2 minutes. Remove and set aside without the grease.
In the same skillet add onion, apple, garlic, thyme and cook for 5 minutes on medium heat or until the apples have softened a bit.
In a bowl, combine tomato paste, apple cider, brown sugar, and beef broth. Pour over the pan and allow to cook until half the liquid has evaporated and sauce has slightly thickened.
Add pork chops back in the skillet. Stir and bring to a simmer. Allow to cook for 3-4 minutes or until the pork is fully cooked and tender.
Taste the sauce and adjust seasoning with extra salt and pepper, as desired. Remove and garnish with parsley. Serve with rice.
