Ingredients
 

  • 4 pieces pork chops (5 oz each), 1 inch thick
  • ½ teaspoon sea salt, or to taste
  • ½ teaspoon ground black pepper, to taste
  • 1 tablespoon oil
  • 2 large white onions, sliced
  • 2 large Fuji apples, roughly chopped (or 3 small apples)
  • 4 garlic cloves, crushed and peeled
  • 1 ½ teaspoon dried thyme
  • 1 tablespoon tomato paste
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 ½ cups beef broth 10.98 oz | 325 ml

Instructions
 

  • Season pork chop with salt and pepper, to taste.
  • Heat a large skillet on medium heat. Sear pork chops on both sides for 2 minutes. Remove and set aside without the grease.
  • In the same skillet add onion, apple, garlic, thyme and cook for 5 minutes on medium heat or until the apples have softened a bit.
  • In a bowl, combine tomato paste, apple cider, brown sugar, and beef broth. Pour over the pan and allow to cook until half the liquid has evaporated and sauce has slightly thickened.
  • Add pork chops back in the skillet. Stir and bring to a simmer. Allow to cook for 3-4 minutes or until the pork is fully cooked and tender.
  • Taste the sauce and adjust seasoning with extra salt and pepper, as desired. Remove and garnish with parsley. Serve with rice.
