1red bell pepper,sliced (5.07 oz | 144 g)
1red onion,chopped
1tablespoonolive oil
2cupscooked rice10.58 oz | 300 g
1cupsweet corn5.78 oz | 164 g
2cupsromaine lettuce3.52 oz | 100 g
Cilantro Mayonnaise
1handful of fresh cilantro,chopped
½cupmayonnaise3.9 oz | 110 g
2tablespoonslime juice,or to taste
1tablespoonolive oil
salt,to taste
Instructions
Season beef with taco seasoning and spices (ground cayenne, chili powder or ground cumin), if using.
Heat a non-stick skillet with oil. Add beef and saute for 8-10 minutes until nicely browned. Add tomato paste. Stir and cook for 2 more minutes until paste is fully incorporated. Taste and adjust seasoning with a little salt, if desired.
Remove and clean the skillet with kitchen paper. Add olive oil and saute bell pepper and onion until soft, about 5 minutes.
Cilantro Mayonnaise:
In a blender, combine all ingredients until blended. Taste and adjust seasoning with salt and a little sugar or honey, if desired. If you want to customize/personalize the flavor of the sauce - simply combine all the ingredients except for the cilantro in a bowl then taste and adjust as needed. Place the sauce mixture with cilantro in a blender then process until combined.
Assemble:
Assemble your bowl with rice as a base. Then arrange beef, saute vegetables, beef, sweet corn and lettuce in the bowl. Serve with the Cilantro Mayonnaise. Enjoy!
