Ingredients
 

  • 1 sheet of puff pastry, thawed
  • 1 cup frozen spinach, thawed and drained
  • 1 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup mayonnaise
  • 2 cloves garlic, peeled and minced
  • Ground pepper, to taste

Instructions
 

  • Preheat your oven to 375°F (190°C) to ensure it's ready to go when your tartlets are assembled.
  • In a mixing bowl, combine the thawed and drained spinach, crumbled feta cheese, grated Parmesan cheese, minced garlic, and mayonnaise. Mix well until all ingredients are evenly incorporated. Season with ground pepper to taste.
  • Cut the pastry into small squares that will fit the muffin tin holes.
  • To prevent the puff pastry from rising too much, use a fork to make a few small holes in the bottom of each square. This will help release steam during baking and keep the tartlet shells in shape.
  • Spoon the spinach and feta mixture into each puff pastry cup, ensuring an even distribution. Be generous with the filling but leave a small border around the edges.
  • Place the muffin tin in the preheated oven and bake for approximately 15 - 20 minutes or until the puff pastry turns golden brown, and the filling is bubbly.
  • Allow the tartlets to cool for a few minutes before carefully removing them from the muffin tin.
