Ingredients
 

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely diced
  • 4 garlic cloves, minced
  • 1 large egg
  • 1/3 cup milk
  • 1/2 cup barbecue sauce, divided (adjust amount to taste)
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce or Soy Sauce
  • 1 teaspoon smoked paprika
  • 1 1/4 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper

Instructions
 

  • Grease the bottom of the slow cooker or crockpot.
  • In a large mixing bowl, combine the ground beef, breadcrumbs, onion, garlic, egg, milk, 1/4 cup barbecue sauce, ketchup, Worcestershire or Soy sauce, smoked paprika, salt, and black pepper. Mix by hand until just combined.
  • Transfer the mixture to the slow cooker and shape it into a loaf.
  • Cook for 3 hours on high or 6 hours on low or until the internal temperature reaches 160°F (71°C).
  • During the last hour, spread the remaining barbecue sauce all over the meatloaf. You can increase the barbecue sauce to 1/3 cup if you like more of it. Cook for another 30-60 minutes until the sauce is fully heated through.
  • Let the meatloaf rest for 10 minutes before slicing and serving.
