In a pan, heat oil over medium heat. Add the garlic, ginger, onion, and jalapenos and sauté for 5 minutes, until soft and fragrant.
Next, add the mashed bananas, tomato paste, brown sugar , vinegar, chilli powder, salt and water. Mix well and bring the mixture to a gentle simmer.
Now turn down the heat and simmer for 10 more minutes, until thickened slightly. Let the mixture cool completely and blend until smooth. Transfer into a glass jar or an airtight container and refrigerate.
