Ingredients
 

  • 2 tbsp oil
  • 3-4 cloves garlic, chopped
  • 1 jalapeno, seeded and chopped
  • ½ small onion, chopped
  • 1 tsp fresh ginger, chopped
  • 2 bananas, mashed
  • 2 tbsp tomato paste,
  • 2 tbsp brown sugar
  • 1 tbsp vinegar
  • 1 tsp chilli powder
  • 1/4 cup water

Instructions
 

  • In a pan, heat oil over medium heat. Add the garlic, ginger, onion, and jalapenos and sauté for 5 minutes, until soft and fragrant.
  • Next, add the mashed bananas, tomato paste, brown sugar , vinegar, chilli powder, salt and water. Mix well and bring the mixture to a gentle simmer.
  • Now turn down the heat and simmer for 10 more minutes, until thickened slightly. Let the mixture cool completely and blend until smooth. Transfer into a glass jar or an airtight container and refrigerate.
