Ham, Caramelized Onion Jam and Swiss Cheese Sandwich

3tablespoonscaramelized onion jam (or homemade caramelized onions) or fruit chutney, divided
A bunch of fresh arugula,(optional but adds flavor so use if possible)
½poundleftover baked ham,sliced (or as needed)
butter,as needed
Instructions
Coat a grill pan or medium-size nonstick skillet with cooking spray and place over medium heat. You can also use butter if you like.
As the pan heats up, spread 2 slices of bread evenly with mayonnaise. Top with a couple of cheese slices.
Get another couple of pieces of bread and spread one side with mustard.
On the bread spread with mustard, spoon over either the onion jam (or caramelized onion) or the chutney.
Add the fresh arugula then top with a couple of leftover ham slices. Place the bread with the cheese on top to form a sandwich.
Butter the outer sides of the bread. Cook on the heated grilled pan or skillet over medium heat for 6-8 minutes or until cheese has melted, turning halfway through.
