Ingredients
 

  • 4 slices sourdough bread or 1 big ciabatta, sliced
  • 2 tablespoons mayonnaise, divided
  • 4 slices Swiss cheese, divided
  • 2 tablespoons yellow mustard, divided
  • 3 tablespoons caramelized onion jam (or homemade caramelized onions) or fruit chutney, divided
  • A bunch of fresh arugula, (optional but adds flavor so use if possible)
  • ½ pound leftover baked ham, sliced (or as needed)
  • butter, as needed

Instructions
 

  • Coat a grill pan or medium-size nonstick skillet with cooking spray and place over medium heat. You can also use butter if you like.
  • As the pan heats up, spread 2 slices of bread evenly with mayonnaise. Top with a couple of cheese slices.
  • Get another couple of pieces of bread and spread one side with mustard.
  • On the bread spread with mustard, spoon over either the onion jam (or caramelized onion) or the chutney.
  • Add the fresh arugula then top with a couple of leftover ham slices. Place the bread with the cheese on top to form a sandwich.
  • Butter the outer sides of the bread. Cook on the heated grilled pan or skillet over medium heat for 6-8 minutes or until cheese has melted, turning halfway through.
  • Serve with some greens on the side, if desired.
