Ingredients

  • cups all-purpose flour
  • 2 tbsp sugar
  • tsp baking powder
  • ¼ tsp salt
  • cups milk
  • 1 egg
  • 3 tbsp unsalted butter melted

For the Toppings (suggestions)

  • Fresh fruits, strawberries, blueberries, raspberries, sliced bananas
  • Whipped cream
  • Nutella or chocolate sauce
  • Maple syrup
  • Peanut butter
  • Chopped nuts almonds, walnuts, pecans
  • Shredded coconut
  • Mini marshmallows
  • Sprinkles
  • Honey
  • Caramel sauce
  • Yogurt
  • Bacon

Instructions

Prepare the Pancake Batter

  • Sift together the flour, baking powder, salt and sugar in a large mixing bowl. Make a well in the center, place the egg in, then pour in the milk and the melted butter. With a whisk, mix until the batter is free from big lumps or until relatively smooth.

Cook the Pancakes

  • Heat a griddle or frying pan (some pans need to be greased a bit beforehand) over medium high heat. (I use a non-stick griddle so there’s no need to grease it all). When the pan or griddle is hot enough,  scoop the batter onto the griddle/pan using a ladle or small measuring cup (1/4 cup or less). Since you are making a charcuterie board, don’t make the pancakes big. Cook until bubbly approximately 1 to 1-1/2 minutes.

Flip and brown the other side. Just cook until it’s fully set, approximately 1-2 minutes.
  • Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep them warm. Repeat the process until all the batter is used. (Please see the notes or pointers in the write-up [FAQs] to see other ways to ensure the pancakes keep warm).

Assemble Your Pancake Charcuterie Board

  • Select a large serving board or platter to arrange your pancake charcuterie. Place a stack of freshly cooked pancakes at one end or in the center of the board.
  • Arrange an assortment of toppings in small bowls or ramekins around the pancakes. Be creative and use a variety of colors, textures, and flavors to make your charcuterie board visually appealing.
  • Place fresh fruits, whipped cream, Nutella or chocolate sauce, maple syrup, peanut butter, chopped nuts, shredded coconut, mini marshmallows, sprinkles, honey, caramel sauce, yogurt, etc in different sections of the board.

Enjoy and Share

  • Once your pancake charcuterie board is beautifully assembled, invite your family or guests to dig in and create their own pancake masterpieces. Let them explore different combinations and experiment with flavors.
  • To serve, simply grab a pancake from the stack and dump whatever topping you fancy! Enjoy!
