Sweet Red Pepper and Cheese Frittata

Ingredients
 

  • 2 tablespoons Olive Oil
  • 1 small onion, diced
  • 2 medium Red Potatoes, diced
  • 1 large Red Bell Pepper, diced (depending on the size you can use just half)
  • 1 teaspoon dried Italian seasoning
  • 4 lightly beaten Eggs
  • 1/3 cup crumbled Feta cheese or grated Parmesan
  • Salt and Pepper to taste

Instructions
 

  • Preheat the oven to  400F.
  • Heat the oil on medium in a frying pan or skillet that is oven-safe. Saute the onions for a couple of minutes. Add the diced potatoes and cook until nicely browned. Season with salt and pepper, to taste.
  • Add the red peppers and the Italian seasoning. Stir and cook for another 2-3 minutes.
  • Place the beaten eggs in a gravy boat.  Pour the beaten eggs and distribute evenly on the potato mixture. You can also slightly tip the pan to evenly distribute the eggs. Sprinkle the parmesan cheese all over. Place in the oven and bake for about 10-12 minutes or until the eggs are fully set and the cheese has melted.
  • Enjoy for breakfast or brunch. Serves about 4.
