Sweet Red Pepper and Cheese Frittata

Whether for breakfast, brunch or lunch, this Sweet Red Pepper and Cheese Frittata is always a delicious option! A light and wholesome option and can be served as a meal when paired with some salad greens!

Growing up, we always had hot breakfast. It was just the norm. We would wake up to the aroma of rice cooking in the pot and some eggs being fried or scrambled and often with some meat or fish (for my Dad) on the side.
My mom or a helper would always prepare it for us. I guess we were really pampered then as all we had to do was dress up and then sit down for breakfast and then be off to school. Oh, those good old days. 🙂

To this day, my mom would still make fried diced potatoes for breakfast with scrambled eggs on the side. I always love this and look forward to it when we go back to Manila.

Now that I have my own little family, I strive whenever possible to give them a cooked breakfast just like my Mom did. While it may take more time and effort than usual, the smiles of satisfaction from my family is more than enough for me to keep it up!

We’ve had this recipe a few times already and we always love it. The good thing – it’s pretty easy to make and quite flavorful, too. I have used both Feta and Parmesan cheeses so use your favorite strong-flavored cheese with it. Next time, I will try some crumbled Blue Cheese; I can’t wait….. 🙂

Ingredients

2-3 Tablespoons, Olive Oil
1 small onion, diced
2 medium Red Potatoes, diced
1/2-1 large Red Bell Pepper, diced (depending on the size)
1 teaspoon dried Italian seasoning
4 lightly beaten Eggs
1/3 cup crumbled Feta cheese or grated Parmesan
Salt and Pepper, to taste

Handy tools: Medium size Skillet, Gravy boat (latter is optional but quite helpful).

Procedure

Preheat the oven to  400F.

Heat the oil on medium in a frying pan or skillet that is oven-safe. Saute the onions for a couple of minutes. Add the diced potatoes and cook until nicely browned. Season with salt and pepper, to taste.

Add the red peppers and the Italian seasoning. Stir and cook for another 2-3 minutes.

Place the beaten eggs in a gravy boat.  Pour the beaten eggs and distribute evenly on the potato mixture. You can also slightly tip the pan to evenly distribute the eggs. Sprinkle the parmesan cheese all over. Place in the oven and bake for about 10-12 minutes or until the eggs are fully set and the cheese has melted.

Enjoy for breakfast or brunch. Serves about 4.

  1. Cheese on top looks delightful! I've tried Frittata with Blue cheese and it really great!! I like that one better than other cheeses! Great recipe!
