Growing up, we always had hot breakfast. It was just the norm. We would wake up to the aroma of rice cooking in the pot and some eggs being fried or scrambled often with meat or fish (for my Dad) on the side.

Heat the oil on medium in a frying pan or skillet that is oven-safe. Saute the onions for a couple of minutes. Add the diced potatoes and cook until nicely browned. Season with salt and pepper to taste.

Add the red peppers and the Italian seasoning. Stir and cook for another 2-3 minutes.

Place the beaten eggs in a gravy boat.  Pour the beaten eggs and distribute them evenly on the potato mixture. You can also slightly tip the pan to distribute the eggs evenly. Sprinkle the parmesan cheese all over. Place in the oven and bake for about 10-12 minutes or until the eggs are fully set and the cheese has melted.
