I am swamped with paperwork today. It’s not fun. I’ve done this routine countless times before. But it’s never an enjoyable experience; it’s always tedious. I am talking about applying for a visa. Since I still have my Filipino passport, even though I am a permanent resident here in the US, whenever we travel abroad, I still have to apply for visas (except when I am travelling around Southeast Asia, where there is a reciprocity agreement among neighboring countries, so no visas are required).

My husband is English, so we occasionally have to return to England to visit his family, which means applying for a visa every time. I know you’re probably thinking Why not apply for the long-term visa? A long-term visa would be costly, so it’s more cost-effective for us to opt for a short-term visa, as we don’t return to the UK every year. Besides, though hubby is a British national since he is residing overseas I don’t have the privilege to apply for a more permanent visa to the UK. What I find weird (and kind of annoying I must admit) is that I have to pay for a Family visa to go to the UK every time I travel there even though I am married to a British citizen (for nearly 12 years) while I actually don’t have to pay for a visa (though I must still apply) if I go to France or any other Schengen countries.

I know you may be scratching your head at this. Since hubby is a citizen of a member state of the European Union (countries specifically in the Schengen region), I can get a visa free of charge in any of the member states as a courtesy. So, if I wish to go to France or Italy, my visa is free, but if I ever wish to go to the UK, I have to pay….sigh. Very strange. Thus, I always jokingly tell my hubby when it’s his turn to apply for a visa and pay for it, too, in order to visit a Southeast Asian country, “It’s payback time.” Lol. Anyway, I won’t go into the details of the nightmare scenarios I experienced when applying for visas – there isn’t enough space here. 😉

Anyway, what does it have to do with this post? Well, since I have been busy collating my documents for the visa application, I didn’t have time to make a new post, so I had to dig up my blog archive for unpublished posts, and thankfully, there are still quite a few there for emergency situations like this, including this post, which I made several months ago. And now the time has arrived to share this delicious post. Enjoy!

Green Tea Chocolate Muffins

Green Tea provides a lovely shade of green to these moist and chocolaty muffins. Great for breakfast, tea time and any time of the day!

Ingredients

  • 2 cups all-purpose Flour
  • 3-4 teaspoons Matcha Green Tea powder (depends on how green you want the muffins to be)
  • 2 teaspoons Baking Powder
  • 3/4 teaspoon Salt
  • 2 large Eggs
  • 1 cup Sugar
  • 1 cup Vanilla or plain Yogurt
  • 1/2 cup Coconut or vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 cup semi-sweet (dark) Chocolate chips (I used mini-chips in the above photos)

Instructions

  1. Preheat the oven to 375 F. Place the muffin liners in a 12-cup muffin pan plus another 6-cup regular muffin tin (if making 18).
  2. In a large bowl, combine the flour, green tea powder, baking powder and salt. Whisk together. Set aside.
  3. In another bowl, lightly beat the eggs. Add the yogurt, sugar, oil and vanilla extract and stir until blended. Mix the wet and dry ingredients just until combined. Fold in the chocolate chips.
  4. Spoon the batter into the prepared muffin pans. Divide evenly among the 12 or 18 cups. Use an ice cream scooper for equal distribution. One large scoop per cup can fill up to 18 liners.
  5. Bake in the oven for 22-25 minutes for the bigger muffins and about 18-20 minutes for the smaller ones or until a tester inserted in the center of the muffins come out clean. Remove from the oven and transfer to a wire rack to cool completely.
