Every 3rd Sunday of the month, we have a fellowship meal at church. I enjoy this time of fellowship because I get to talk to some of my churchmates in a more personal and extended time and get to know them more as we sit down for lunch.

But, apart from that, I have to admit I also always look forward to the many delicious meals that are served during this special Sunday. And, I am never disappointed.

It was during one of these fun fellowship meals that I got acquainted with this delicious chicken recipe that’s now become an instant family favorite.

In fact, today as I write my blog post, this was our dinner! How delicious it was indeed. Even my picky teenagers loved it!

Without any hesitation, I asked the lady who brought this chicken to the fellowship meal. Upon tasting how delicious it was, I immediately ask if could kindly tell me how to make this recipe. Thankfully, she kindly obliged!

I was so delighted to know it was such a crazy easy recipe involving only 4 ingredients with barely 5 minutes, perhaps even less, prep time. How fabulous is that!

Then, once all these 4 ingredients are placed in the cooker, it’s just a matter of waiting for 4 hours until it’s done.

I cannot believe, until my tastebuds proved it, that such a crazy easy recipe with minimal ingredients can produce such delectable results.

The delicious photos of this Slow Cooker Pesto Ranch Chicken don’t lie. It’s truly as delicious as it looks.

It even makes its own super flavorful sauce or gravy if you want that you can smother the chicken in or drizzle all over your rice or preferred side dish.

I truly recommend this recipe, if you haven’t tried it yet. I know it’s quite a popular one and I’m amazed I haven’t tried this until today!

NOTES ON INGREDIENTS FOR SLOW COOKER PESTO RANCH CHICKEN

  • Dry ranch seasoning mix – about 1 oz (if using packet) or 3 tablespoons if using the bottled dry ranch. You can also use homemade ranch mix, if you have it or prefer it.
  • Pesto sauce – storebought or homemade. If using storebought, get a good quality brand.
  • Chicken broth
  • Chicken thighs, skinless and boneless – maybe replaced with chicken breasts

HOW TO MAKE SLOW COOKER PESTO RANCH CHICKEN

  1. In a small bowl, mix together the dry ranch, pesto sauce, and chicken broth. Set aside.
  2. Place the chicken thighs at the bottom of the slow cooker or crockpot. Pour the ranch mixture all over to cover the chicken.
  3. Cook on high for 4 hours or about 6 hours on low or until the chicken pieces are tender and fully cooked. Serve the chicken whole or shred first, if desired. This pairs so well with rice. Pasta and mashed potatoes would be great too. Have it with some green veggies on the side. Absolutely delish!

Recipe Notes

I use air-chilled boneless and skinless chicken thighs with no extra water content and with these, I can use between 8-10 pieces for this recipe. If you have bigger chicken thighs with extra water content perhaps you can adjust by using the weight equivalent of 3-4 pounds.

If you don’t have thighs then simply replace them with chicken breasts.

Ingredients
