Turkey, Brie & Cranberry Grilled Sandwich (Thanksgiving Sandwich)

This Turkey, Brie & Cranberry Grilled Sandwich tastes like a delicious Thanksgiving meal all over again! Nothing is wasted from Thanksgiving dinner when you make this easy-to-follow recipe for a flavorful turkey, brie, and cranberry grilled sandwich using your leftovers! You can also substitute turkey with cooked chicken, if that is available instead.

This Thanksgiving 2022 is probably the best Thanksgiving for us for so many reasons!

First, juxtaposed with the kind of Thanksgiving we had last year – this year’s Thanksgiving would have been a runaway winner. Last year, around Thanksgiving time my entire family, save for my daughter, was ravaged by Covid-19.

I had such a bad Covid that I was hospitalized. I didn’t just get the ordinary Covid, which, if one was healthy enough, one could easily recover from in 3-5 days or may not even feel it if asymptomatic. What I got was the virulent kind – Covid-19 with the delta variant complicated further by a bout of pneumonia.

If I hadn’t gotten to the hospital in time, I could have been one of the thousands who passed away because of COVID-19. Thankfully, that wasn’t the will of the Lord for me as He graciously allowed me to recover fully and quickly.

Secondly, this was our first time hosting a proper Thanksgiving Dinner! It was exhausting but with the help of family and friends, it became a successful affair. The food was excellent – if I may say so myself (disclaimer: the cooking was evenly divided among us and many have contributed!).

The fellowship and enjoyment of each other’s company was quite blessed. It was great to be with the people I love and appreciate. Overall, we had about 15 people – all left the house happily fed and satisfied.

Taste Thanksgiving again with this Turkey, Brie & Cranberry Grilled Sandwich—easy, cheesy, and perfect for using holiday leftovers!

Now since we were left with some leftovers, I had to figure out the best way to use them. By that, I mean not just the leftover turkey but the other Thanksgiving dishes too like cranberry sauce, etc.

Making this Turkey, Brie & Cranberry Grilled Sandwich was the perfect vehicle to use up as much of our turkey leftover but also other remaining Thanksgiving components like the cranberry sauce, some cheese, and even the fresh herbs we used for the stuffing!

WHAT ARE THE INGREDIENTS FOR TURKEY, BRIE AND CRANBERRY GRILLED SANDWICH?

  • 1 loaf Ciabatta bread, or bread of choice
  • Butter, for brushing
  • Turkey Breast, sliced
  • Cranberry sauce
  • Brie
  • Mashed Potatoes
  • Lettuce leaves

HOW DO YOU MAKE A TURKEY, BRIE, AND CRANBERRY GRILLED SANDWICH?

Slice the ciabatta horizontally and then vertically into about 2-3 sections. Layer the sandwich with turkey slices, cranberry sauce, brie, mashed potatoes, and lettuce leaves. The lettuce can be added before or after grilling, depending on the type of lettuce leaves you wish to use.

Cranberry sauce

Brush butter or olive oil on each side of the sandwich exterior/crust. Toast on a preheated sandwich grill or cast iron skillet, pressing firmly on each side until golden brown and heated thoroughly. Enjoy!

Alternatively, toast the bread slices in melted oil or butter, then layer the Thanksgiving leftovers between the slices as instructed above. Sometimes I do the sandwich this way and heat the mashed potatoes and cheese (for the latter to soften and melt a little) before adding them to the sandwich.

  • 1 loaf Ciabatta bread, sliced into 3 pieces
  • Butter, for brushing
  • Turkey Breast, sliced (use leftover turkey if available) or replace with cooked chicken
  • Cranberry dressing or sauce, as needed
  • 3 oz Brie
  • Mashed potatoes, as needed
  • Lettuce leaves, as needed
