This is my third version of a tasty brussels sprouts dish! Yes, that’s how much my family and myself love brussels sprouts. When I say family, I meant that to include my two children, a 13-year old and a 10-year old. No complaints or questions asked when I tell my kids that we’re having some brussels sprouts for dinner. For this, I am truly thankful because I know I don’t have to force or coax them to eat their vegetables. So, as you can imagine brussels sprouts is often on our menu.

I understand that enjoying brussels sprouts can be kind of an acquired taste. I should know as I wasn’t a fan of brussels sprouts in the beginning either. I think I must have tried it before but it was simply boiled and I found the taste to be too bitter yet quite unexciting to my palate.

But then the day came when I added garlic and bacon to the mix and sauteed the brussels sprouts with them and my taste buds were blown away. Wow, it totally elevated the humble and boring brussels sprouts into something so tasty and enjoyable. And I wasn’t the only one who felt the same; my kids too, so sometimes if I don’t make a large enough batch, they’re not too happy with me because that means they won’t get as much as they want! We totally love having it with rice, too. This way we treat the sauteed brussels sprouts not so much as a side dish but really a main course with freshly cooked rice as it’s perfect partner. It’s so good that way!

For a flavor variation, I tried adding some balsamic glaze to the mix this time. It is so good as well! I love the tang that the balsamic vinegar added to the dish. To balance it out and so it’s not overwhelmingly vinegary, I simply add a little bit of sugar, much like a seasoning, so that the taste is just right. You may leave it out if you’re on a completely low-carb diet or simply replace with your favorite sweetener. Again, you don’t need a lot of sugar, just a 1/2 a teaspoon or to your taste. Balsamic Glazed Brussels Sprouts

Ingredients
 

  • 1 tbsp Olive oil
  • 3 cloves Garlic, chopped
  • 4 slices Bacon, chopped
  • 16 oz Brussels Sprouts, shaved or shredded
  • 2-4 tbsp Balsamic Vinegar, or to taste
  • 1/2 cup Water
  • 1/2 tsp Sugar
  • Salt and Pepper, to taste

Instructions
 

  • Heat oil in a deep or large skillet over medium heat. Add the garlic and bacon and cook until the bacon has released its fat and turned light brown about  3-5 minutes.
  • Add the brussels sprouts and saute until slightly tender and crisp, about 3-5 minutes. 
  • Pour in the vinegar and water; cover and cook in low to medium heat until vegetables are tender, 3-5 minutes. Season with sugar, salt and pepper, to taste. Serve immediately with rice, if preferred
