Barbecue Pulled Pork Potato Chips Nachos
A yummy twist on your usual nachos – use potato chips instead of tortilla chips then load it with pulled pork, barbecue sauce, cheese, pickles, and green onions! Such a delicious party appetizer or snack for Game Day or any gathering!
One of our dear friends from church, Eve, shared this delicious recipe with us last summer when we gathered for our monthly YAMS (Young and Married) meeting. She said this is how they make their nachos in Missouri using pulled pork on top of potato chips and not fried tortillas!
We were all intrigued for sure! After a couple of bites – I was so hooked and loved it! I said to myself, from now on this is how I will make my nachos.

What I love are the many yummy combinations of flavors in one plate that this barbecue pulled pork potato chips nachos has to offer!
Take this – sweet-tangy barbecue flavors from the pulled pork, salty savoriness from the potato chips, sweet, briny, and crunchy deliciousness from the bread and butter pickles, cheesy goodness from either cheddar or queso dip, fresh onion flavors from green onions sprinkled on top and for good measure – an extra dollop or two of barbecue sauce!
There are a couple of options with regard to the cheese. You can use shredded cheese like cheddar, Mexican blend, or pepper jack, or for convenience (no more extra melting) a queso dip! For the former, we need to melt the cheese briefly in the oven just before serving.
If using a queso dip, you can simply pour it over the nachos and serve right away. Feel free to choose whichever you like. They are equally delicious!

WHAT ARE THE INGREDIENTS FOR BARBECUE PULLED PORK POTATO CHIPS NACHOS?
- Potato chips of your choice
- Shredded Cheddar cheese (or Mexican blend / Pepper Jack) or Queso Dip
- Pulled Pork – one batch or use left over from your pulled pork recipe
- Bread & butter pickles
- Barbecue sauce – use your favorite brand.
- Green Onions or Scallions, thinly sliced
HOW DO YOU MAKE BARBECUE PULLED PORK POTATO CHIPS NACHOS?
- Spread potato chips out in an even layer on a tray or shallow oven-proof platter.
- Top with half the shredded cheese, pulled pork, and pickles. Add the remaining cheese on top. Bake in preheated 350 F degree oven for about 5-7 minutes or until the cheese on top has melted. If using queso dip, simply heat it first to warm it up then layer as above.
- Garnish with barbecue sauce and some sliced green onions. Serve immediately.

Ingredients
- 1 pack potato chips of your choice

Omg potato chip nachos are now my new favorite way to make nachos!! What a great idea to use potato chips for the base – they were crispy, salty, and delicious. And the bbq pulled pork topping was tasty and satisfying! Yum!
