Easy Magic Pumpkin Bars (7 Layer Bars)

The classic favorite magic bars get a fall-inspired make-over with the addition of pumpkin puree and pumpkin pie spice in these Easy Magic Pumpkin Bars. So yummy and most of all crazy easy to make! 7 layers of deliciousness with every bite of this scrumptious fall dessert!

Hello Fall! I am so glad it’s finally Fall! I feel it in the air. Cold-crisp mornings, leaves changing colors, falling leaves, the aroma of warm spices, pumpkin latte, sweater and boots and so much more! 

My favorite part of fall is baking, especially any goodies that has anything and everything pumpkin!

So it’s not a surprise that I decided to finally make a pumpkin-infused version of magic bars (aka 7 layer bars or hello dolly bars!).

I was truly excited because I know it would be so yummy what with all that pumpkin mixed with all of my favorite pumpkin spices! Now all I needed to do was gather the rest of the ingredients!

In my pantry, I have as staples a box of graham crackers, chocolate chips, shredded coconut, pecans or walnuts, and condensed milk. I have them handy in case I need to make some delicious sweet treats for the kids and occasionally for Sunday coffee breaks in our church. 

Finally, last weekend I decided to make these pumpkin magic bars! As you can see in the photos, they came out so yummy – all that delicious pumpkin infused with warm spices mixed with sweetened condensed and then sprinked all over with coconut, nuts and chocolate! How can you go wrong?

 

What a delicious blast of flavors in my mouth! It truly came out so yummy. I brought it to church for our coffee break and I almost never got the chance to have a tiny piece because there were only two bars left and my children immediately descended on the remaining pieces!

Thankfully, I managed to get a bite or two earlier! People who tasted it said they loved the pumpkin flavor and aromatic spices that shone through. I certainly enjoyed it with coffee, too! What a yummy fall treat!

WHAT INGREDIENTS DO I NEED TO MAKE   EASY MAGIC PUMPKIN BARS?

  • Butter – you can use either salted or unsalted. I’ve used both and they’re equally yummy. 
  • Graham cracker crumbs – crush the crackers using a rolling pin or simply use a food processor for convenience
  • Pumpkin puree – I use the canned pumpkin puree (not pie filling) but you can use homemade puree if you like.
  • Pumpkin Pie Spice 
  • Can of sweetened condensed milk 
  • Shredded coconut – I used the sweetened coconut and didn’t make it too sweet so I thought that worked well. Feel free to use the unsweetened one, too if you prefer that.
  • Pecans (or walnuts) –  coarsely chopped
  • Semisweet chocolate morsels or chocolate chips (perhaps I will try butterscotch or peanut butter next time!)

HOW DO I MAKE EASY MAGIC PUMPKIN BARS?

  1. Preheat oven to 350 F. Melt one stick of butter (1/2 cup) in a 9 x13 pan in the oven as it preheats. Remove once the butter is melted ensuring that the entire bottom of the pan and an inch up the sides are coated.
  2. Mix the graham crackers with the butter and then press to form a crust. Make sure the crust is spread flatly and evenly. Set aside.
  3. In a bowl, stir together the sweetened condensed milk, pumpkin, and pumpkin spice until mixed well. Pour this mixture over the crust, spreading it evenly all over.
  4. Sprinkle one (1) cup of shredded coconut all over. Sprinkle with the chopped nuts and the chocolate chips. Sprinkle with the remaining coconut.
  5. Bake for 35 minutes or until coconut looks lightly toasted. Allow the bars to cool completely in the pan before slicing. Can be made a day ahead to allow flavors to develop. Cut into 24 bars. SO YUMMY!

  • cups graham cracker crumbs

  • 14 oz can sweetened condensed milk
  • 1 cup canned pumpkin puree
  • tsp pumpkin pie spice
  • 1 cup semisweet chocolate morsels or chocolate chips
