Guacamole, Salsa and Egg Breakfast Sandwich

Such an easy and delicious sandwich that requires no major prep and can be made with either homemade or storebought ingredients for convenience – Guacamole, Salsa and Egg Breakfast Sandwich.

It’s Cinco de Mayo tomorrow! In honor of Cinco de Mayo, I am sharing this Mexican-inspired delicious and easy Guacamole, Salsa, and Egg Breakfast Sandwich!

It was actually out of necessity that I made this sandwich. We are undergoing renovations in our kitchen and for several weeks now, I don’t have a proper kitchen so all our meals have to be something quick and nothing that requires any major preparation!

That gave birth to this easy and very tasty sandwich! The only ingredient I had to cook was the eggs while the bread simply required toasting. Easy-peasy.

Yup, I only used about 6 ingredients – bread, butter, eggs, guacamole (storebought), salsa (also storebought), and cheese.

Thankfully, my whole family loved these sandwiches as they’re truly delicious! Definitely, these Guacamole, Salsa, and Egg Breakfast Sandwiches are going to our “must-make-again” collection!

NOTES on INGREDIENTS for Guacamole, Salsa and Egg Breakfast Sandwich.

  • Bread – I have used English muffins and gluten-free bread so feel free to use your favorite bread for sandwiches.
  • Butter – buttering the slices of bread adds so much flavor so I always do this.
  • Eggs – make sure they’re fresh and not expired.
  • Guacamole – you can use your favorite homemade recipe or your favorite brand.
  • Salsa – you can use your favorite homemade recipe or your favorite brand.
  • Cheese – Havarti cheese was so delicious for this but feel free to choose cheddar or any easy melting cheese that you like.

How do you make Guacamole, Salsa and Egg Breakfast Sandwich?

  1. Cook your eggs over easy in a frying pan or simply fry, poach or scramble, whichever you prefer.
  2. As you’re cooking the eggs, butter one side of the bread then toast.
  3. Melt the cheese on the other slice of bread. If you have an air fryer, that comes in handy for this.
  4. Spoon some guacamole on the bread slice with the melted cheese. Spoon a little salsa on top, and spread it all over.
  5. Place the eggs on top. Alternatively, you may simply spoon some salsa over the eggs if you prefer that. Place the buttered toast on top.
  6. Suggested add-ons: crispy bacon or ham! Enjoy right away.

Ingredients
 

  • 8 slices bread, English muffin or your favorite sandwich bread
  • butter, as needed
  • 4 eggs, or as needed
  • 1 jar or pack of guacamole, homemade or store-bought
  • 1 jar of salsa, homemade or store-bought
  • 4 slices havarti cheese, or use your favorite

Instructions
