Mixed Berry and Pecan Cobbler

Use your favorite summer fruit or berry to make this very easy and tasty Mixed Berry and Pecan Cobbler. The nuts add extra crunch while the spices add so much flavor.  I have brought this dessert to gatherings with family and friends and it’s always a big winner! Make sure to serve it with ice cream or pouring cream – oh heavenly!

Nothing speaks more of summer than a fruit cobbler. Love this dessert’s versatility because you can pretty much use your favorite summer berry or fruit with it. While it does require some baking, when you top it with pouring cream or ice cream, it certainly becomes a deliciously refreshing summer dessert.

 

 

This cobbler came out of necessity. I already have a slow cooker version but didn’t have the time to wait for it to cook in the slow cooker. I needed something that I can make and serve within an hour or less. I was going to a Breakfast Potluck that day and had to make something quick so I thought of trying this. Am so glad that it all came together and the result was truly amazing. A very flavorful cobbler made in a hurry!

 

 

The added spices enhance the flavor of the batter/sponge and complement the berries’ tang while the chopped nuts add that delicious crunch! So, if you’re short of time but still wish to make an amazing dessert that’s sure to please then make this Mixed Berry Cobbler! Don’t forget to serve it with a little pitcher of cream beside it. Ingredients:

1 stick (1/2 cup) Butter,
1 cup flour
¾ – 1 cup sugar*
1 teaspoon Baking Powder
½ teaspoon ground Cinnamon
¼ teaspoon ground Nutmeg
A pinch of cloves (optional)
½ cup milk
1 ½ cups each Raspberry and Blackberry (or
Blueberries), fresh or frozen
1/3 cup sugar
½-3/4 cup Pecans or Walnuts, chopped

 

*I used 1 cup of sugar the first time but my husband said it was a little too sweet for his
liking. Others like it really sweet so trust your instincts on this. If your berries are quite sweet then use only ¾ cup but if it’s mostly tart then you can use the full cup.  

Procedure

Set the oven temperature to 350F. Place the butter in a 10- or 11-inch long rectangular baking dish and place in the oven and let the butter melt as the oven heats up. Take the baking dish out when the butter is already melted. Don’t let it brown. Mix together the flour, sugar, baking powder, and spices in a bowl. Add the milk to the flour mixture and stir just until moistened. Spoon the batter over the melted butter.

In a small bowl, gently mix the berries and sugar. Evenly distribute the sugared berries over the batter. You can also add the extra sugar that may remain after the berries have been added.

 

Sprinkle the chopped walnuts. Bake for about 35-40 minutes. Serve warm with either some pouring cream (regular unwhipped heavy cream) or ice cream! Heavenly!!!
