Bakery-style Blueberry Muffins
These fluffy, moist, bakery-style blueberry muffins are loaded with juicy berries and feature a perfectly golden top. Made from scratch with simple ingredients, they bake at 375°F in just 20 minutes for the ultimate breakfast or snack treat.

When we lived in Michigan, my kids and I went blueberry picking during the summer. The fresh blueberries we picked from the fields were usually baked into these scrumptious, perfectly domed, bakery-style blueberry muffins! This is the recipe that I have used for about 2 decades already. It’s super tried-and-tested and yummy!

Why You Would Love These Bakery-style Blueberry Muffins
These blueberry muffins are based on a from-scratch blueberry cake batter recipe that produces moist, cakey muffins with a slightly crunchy top. The recipe uses either white or brown sugar, though using all brown sugar or a combination of brown and white sugar yields a better muffin color than all-white sugar, which produces pale-looking muffins.
The batter is thick enough to require folding rather than stirring and nearly fills each muffin cup, creating a nice domed top. The muffins bake at 375°F for 18-20 minutes, then should rest in the pan for 8-10 minutes before transferring to a wire rack.
Light or fruity olive oil can be replaced with plain vegetable oil, and both fresh and frozen blueberries work in this recipe. To finish it off with that lovely bakery-style crackly, crunchy muffin top, I sprinkle granulated sugar on top just before baking!

Why This Recipe Works Well
#1. The type of sugar you choose directly impacts the visual appearance of your muffins, with brown sugar or a combination of brown and white producing better color than white sugar alone, which results in pale-looking muffins.
#2. Using a large ice cream scoop to portion the batter ensures uniform muffin size, leading to even baking times and professional bakery-style domed tops when cups are filled nearly to the top.

#3. The batter for these muffins is intentionally thick, so it requires folding with a spatula rather than vigorous mixing to maintain the proper texture and prevent overmixing.
#4. The 8-10-minute resting period in the pan after baking is critical for allowing the structure to set before transferring to a wire rack, preventing collapse and soggy bottoms caused by condensation.
#5. This recipe is adapted from a from-scratch blueberry cake batter, which explains why the result is exceptionally moist and cakey with a slight crunch on top rather than having a traditional dense muffin texture.

NOTES on INGREDIENTS for Blueberry Muffins.
- Flour – use all-purpose or plain flour
- Sugar: you can use white, brown, or better yet a mix of both for better muffin color. Have some extra for sprinkling on top before baking
- Baking Powder
- Salt
- Eggs – bring to room temperature.
- Sour Cream – use plain yogurt as a substitute
- Olive Oil – use only the light or the fruity version, or replace it with plain or neutral-tasting oil.
- Vanilla Extract
- Fresh or Frozen Blueberries
How do you make Bakery-style Blueberry Muffins?
Preheat oven to 375F. Line your muffin pan with paper cups.
In a large mixing bowl, combine all the dry ingredients. Set aside. In another bowl, mix all the wet ingredients (eggs, sour cream, oil, and vanilla). Pour the wet ingredients into the dry. Mix.

I use a spatula to fold in the flour and mix everything together, but you can also use a whisk. The batter should be thick. Fold in the berries.

Divide evenly among the 12 muffin cups. I use a large ice cream scooper for this. So handy! A full scoop per cup is about right. There is enough batter (nearly full) in each cup to give your muffin a nice dome.
Generously sprinkle the granulated sugar on each muffin to create a beautiful crackly, crunchy top. This is optional, but it makes the muffins look better.

Bake for about 18-20 minutes or until a tester comes out clean. Remove from the oven and, after about 8-10 minutes (when it’s cool enough to handle), transfer to a wire rack to cool completely. Enjoy!
Tips and Tricks
I suggest using either all brown sugar or 1 cup brown and half cup white sugar. It will make the batter look brownish, but you will have a nicer-looking muffin. If you use all white sugar, the muffins will look rather pale. The brown sugar gives the muffins a better color. See below for the color of the muffin when you use more brown sugar than white.

Frequently Asked Questions (FAQs)
Can I use frozen blueberries without thawing them first?
Yes, frozen blueberries can go directly into the batter without thawing. Toss them in a tablespoon of flour before folding them in to prevent them from sinking to the bottom and to minimize color bleeding into the batter. Frozen berries may add 2-3 minutes to the baking time.
How do I store these muffins to keep them fresh?
Store cooled muffins in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, freeze them individually wrapped in plastic wrap, then place them in a freezer bag for up to 3 months. Thaw at room temperature or warm in the microwave for 20-30 seconds.
Can I substitute the sour cream with Greek yogurt?
Full-fat Greek yogurt works as a 1:1 substitute for sour cream and will produce similar moisture and tang. You can also use regular plain yogurt, though the muffins may be slightly less rich. Avoid non-fat varieties as they can make the muffins drier.
Why did my muffins come out dense instead of fluffy?
Overmixing the batter is the most common cause of dense muffins, as it develops too much gluten. Mix only until the dry ingredients are just incorporated—some small lumps are fine. Also, make sure your baking powder is fresh, as expired leavening agents won’t create proper rise.
Can I make mini muffins with this recipe?
This batter works perfectly for mini muffins. Fill mini muffin cups about ¾ full and reduce the baking time to 10-12 minutes at 375°F. This recipe will yield approximately 36-40 mini muffins. Check for doneness starting at 10 minutes with a toothpick test.

Hi, can i use frozen blueberries? Thanks Aviva
Yes, you can.
I have been trying to ask a question all day. I don't know why it is so hard to post a question! Love your blog 🙂 My 2 questions are can i use frozen blueberries and can i use a tofu sour cream? Thanks Aviva I hope this posts!!
Hi! I only open my mail at certain times during the day so I actually just saw your question. Your other question was posted only 20 minutes ago as well. Yes, you may use frozen berries and no need to defrost them. Use them frozen – it's actually better frozen so they retain their shape. You can use Tofu sour cream but I am not sure how that will affect the taste. Let me know please, thanks for stopping by. 🙂
Thank You so much i had a problem with the posting! Great on the answers will get back to you on the tofu 🙂 Aviva
Wonderful! Thanks, Aviva! Have a great week! 🙂
I baked them today and they came out fluffy, moist and of course, delicious! Thank you much for sharing!
Asiya
Glad you enjoyed them, Asiya. Thanks for letting us know.
I baked the muffins. What a wonderful outcome!
So happy you enjoyed them. Thanks for letting us know.
Hi! Can you tell me where you got the blueberries? I used the ones from the can before and well, they turned out okay save for the fact the batter change and the fact that it's for pie toppings/filling may have compromise the proper rising of the muffin.
Are you from the Philippines? I am based in the US and fresh and frozen blueberry muffins are readily available in groceries. The pie topping would be too heavy for this because they would clump up and also would be too sweet but unfortunately I don't know if you will ever be able to get fresh blueberries there. I am not sure if the frozen ones would have even reached our archipelago though I sure hope so 'cause you certainly can use frozen ones without defrosting them. You can attempt to use the dried ones but I don't know where to find them if you are Manila based. Sorry. Perhaps you can try Rustans. This is why it's helpful to inform me where you are from so I can be more helpful. Thanks.
I'm unsure what kind of olive oil to use. Extra virgin, light, or I don't know what the "fruity version" is lol. What comes out best, in your opinion?
You can use light – the fruity version says so in the label. You can also use regular vegetable oil. Please enjoy!
How many muffins does this recipe make?
12 muffins. Good for a 12 muffin tin.
super yummy muffins..
Thanks, Nandoos Kitchen. Please enjoy.
Thank you I love blue berries muffins. Does it affect if I use 1 cup of sugar instead of 1 1/3?
It will be lesser in sweetness. 🙂
Very good advice Ate!
You're welcome!
Can you substitute something else in place of sour cream?
Yogurt is a good substitute.
This has certainly become my go to recipe for blueberry muffins. I have very good nonstick muffin tins so I skip paper liners.
