Pineapple Cinnamon Chicken Curry
Mild and fruity chicken curry with the perfect blend of sweet and spicy flavors! Quick and easy to make; it’s ready in 30 minutes!

I made this chicken curry the other day when we had some friends over. They were all Asians – a Filipino couple and a Chinese couple. Now I didn’t feel like cooking something Filipino or Chinese in particular ’cause I thought, that’s what they eat perhaps on a daily basis, so what’s the point? So I thought to myself, what can I make that’s still familiar to all of us – something with Asian flair and flavors that we will all enjoy. Naturally, a curry dish came to mind immediately! This was it – a fruity, mild and truly delicious chicken curry loved even by non-curry lovers!

Pineapple Cinnamon Chicken Curry: A Sweet, Creamy 30-Minute Dinner
When you want an easy weeknight dinner that feels a little more special than the usual chicken-and-rice routine, this Pineapple Cinnamon Chicken Curry is the answer. Creamy, gently spiced, fruity, and comforting, this simple chicken curry balances tender chicken with warm cinnamon, aromatic ginger, curry powder, juicy pineapple, and sweet raisins.
Unlike a fiery curry that relies on a long list of spices or an all-day simmer, this mild chicken curry comes together in about 30 minutes. It is a wonderful choice for families and curry beginners or even those who hate curry (it might just convert them!) Serve it over fluffy basmati rice, jasmine rice, or coconut rice to soak up every spoonful of the luscious curry sauce.

What Makes This Chicken Curry Special?
Countless ways to make chicken curry exist, from boldly spiced Indian-inspired dishes to Thai coconut curries and Caribbean-style versions. This pineapple cinnamon chicken curry stands out because it combines a familiar, creamy curry base with fruit, warm spices, and crunchy optional almonds.
The flavor profile is mild rather than aggressively hot, yet absolutely delicious! The secret is the use of freshly grated ginger, which adds a spicy kick, warmth, and fresh flavor that pairs perfectly with the sweetness of the raisins and pineapple chunks! The added ground cinnamon may sound unconventional in a savory chicken dish, but it adds a subtle sweetness and gentle warmth that works beautifully with the pineapple and raisins. There’s just a hint of curry which doesn’t overpower the entire dish at all.

Ingredients for Pineapple Cinnamon Chicken Curry
- This easy chicken curry relies on everyday ingredients, yet each one makes an important contribution to the finished dish.
- Boneless, skinless chicken thighs: Chicken thighs are ideal for creamy curries because they stay tender and flavorful during simmering. You may use chicken breast if you prefer, though thighs provide a juicier result.
- Butter and oil: Using both creates a flavorful cooking base for sautéing the aromatics without browning the butter too quickly.
- Garlic, onion, and fresh ginger: These three ingredients create the aromatic foundation. Freshly grated ginger is particularly valuable here because it adds a vibrant freshness that balances the richness of the cream and the sweetness of the fruit.
- Curry powder: Choose a good-quality curry powder and adjust the amount based on your heat preference. The dish is designed as a mild curry, but you can certainly add more for a stronger spice presence.
- Ground cinnamon: Cinnamon adds warmth and a delicate sweet-spice character, tying together the savory chicken, creamy sauce, pineapple, and raisins.
- Heavy cream: Cream transforms the sauce into a smooth, luxurious curry that coats the chicken and rice beautifully.
- Pineapple chunks and pineapple juice: Pineapple gives this curry its sunny, fruity personality. A little reserved juice stirred in at the end boosts the tropical flavor without making the dish overly sweet.
- Raisins: Raisins provide small bursts of sweetness that echo the pineapple and complement the curry spices.
- Sliced almonds: Optional almonds add welcome crunch and a nutty contrast to the silky curry sauce.
Instructions on How to Make Pineapple Chicken Curry
Heat the oil in a deep pan. When the oil gets warm, melt the butter in it.
Sauté the garlic and onions in the melted butter until aromatic, about 1 minute. Add the grated fresh ginger and stir-fry until the onions are translucent, about 3-4 minutes. If using ground ginger, just add it with the other spices.

Adjust the heat to the lowest setting and add the ground cinnamon and curry powder (and ground ginger if using this instead). Let the spices sizzle for a few seconds, then add the chicken and coat with the spices. Once the chicken is fully coated/glazed, add the cream, water, salt, raisins, pineapple chunks, and half the almonds, if using. Stir. Raise the heat until the mixture starts simmering.

Cover, then gently simmer for about 15-20 minutes or until the chicken cubes are tender and fully cooked. Add the 2 tablespoons of reserved pineapple juice and stir quickly to absorb. Taste and adjust seasoning as desired. Serve immediately with some rice on the side. This can be made ahead, and it tastes even better the next day.

The Hidden Technique That Makes Restaurant Curry So Much Better Than Home Versions
Professional chefs use a technique called “blooming” spices that most home cooks skip—and it’s the difference between flat curry and restaurant-quality depth. When you add curry powder and cinnamon to the pan on the lowest heat setting, you activate their essential oils. Heat breaks down the spices’ cell walls and releases fat-soluble flavor compounds that would otherwise remain locked inside.
The Critical 30-Second Window
• Too short (under 15 seconds): Spices remain raw-tasting and powdery
• Just right (20-30 seconds): Aromatic oils release; spices become fragrant
• Too long (over 45 seconds): Bitter, burnt notes develop and ruin the entire dish
Why This Recipe Gets It Right
Notice how the instructions tell you to adjust heat to the lowest setting before adding spices? This prevents burning while giving enough heat for blooming. The addition of cream immediately after stops the cooking process at exactly the right moment.
Visual Cue to Watch For: The spices should darken slightly and the pan should smell intensely aromatic—almost perfume-like. That’s when you know the oils have released.

Frequently Asked Questions (FAQs)
Can I substitute coconut milk for heavy cream in this curry?
Yes, full-fat coconut milk works as a dairy-free alternative and adds a subtle tropical note that complements the pineapple. Use the same quantity as the cream and shake the can well before measuring to incorporate the separated fat.
What’s the best way to store leftover curry and how long does it keep?
Store the curry in an airtight container in the refrigerator for up to 4 days. The flavors actually improve after the first day as the spices continue to meld. Reheat gently on the stovetop over low heat, adding a splash of water or cream if the sauce has thickened too much.
Why should I use chicken thighs instead of breast?
Chicken thighs work beautifully and actually stay more moist than breast meat. Keep the same 15-20 minute simmer time, as thighs and breasts cook at similar rates when cut into chunks, though thighs are more forgiving if slightly overcooked.
Can I make this curry spicier without losing the sweet and fruity character?
Increase the curry powder gradually by half-teaspoon increments, or add a pinch of cayenne pepper, which provides heat without altering the aromatic profile. You can also serve with fresh sliced chilies on the side so each person can adjust their own heat level.

This Pineapple Cinnamon Chicken Curry proves that exceptional flavor doesn’t require complicated techniques or a lengthy spice list. By focusing on quality ingredients—especially fresh ginger and authentic curry powder—and taking just 30 seconds to properly bloom your spices, you’ll create a curry that rivals any restaurant version. The sweet-and-spicy balance makes it approachable for curry newcomers while still satisfying experienced curry lovers, and the quick cooking time means it fits perfectly into busy weeknight schedules. Make a double batch and enjoy how the flavors deepen overnight for an even more delicious second-day meal served over fluffy basmati rice.
