In the Philippines, rice is king…..we have it in the morning, lunchtime, dinner, and yes, even for snacks… and don’t rule it out as dessert too! Sometimes, we cook too much of it and then there are left-overs. But never fear…..sinangag is here. It’s the Tagalog term for “fried rice.” So next time you wonder what to do with left-over rice, try this recipe and you’ll know-how.

The ingredients here can be increased or decreased depending on how much rice you have left, so feel free to adjust it.

WHAT INGREDIENTS TO USE FOR EASY GARLIC FRIED RICE?

  • Day-old rice (refrigerated left-over rice)
  • Olive oil
  • A few crushed garlic
  • Soy Sauce, or to taste
  • Dash of salt, or to taste
  • Eggs, beaten
  • Handful frozen Peas and Corn

You need either a big wok or a deep frying pan for this.

HOW DO I MAKE EASY GARLIC FRIED RICE?

Heat about a 1-2 Tablespoon oil in a pan or wok. Saute the garlic until aromatic. Don’t let the garlic burn.

Add the cold rice and stir to break the grains apart. Cook until warmed up. Season with a little salt. Add the soy sauce and mix with the rice until most of the grains are coated.

You may scramble the eggs in another pan and just add it later after it’s been cooked. But if you have a big enough wok or wide enough pan, create a well/space in the middle of it by pushing the rice to the side. Spray a little oil in the middle and then pour the beaten egg.

Let it set. When the eggs have set enough, flip it over then begin to mix it with the rice breaking it up as you do so. Thereafter, add the frozen peas and corn and continue to stir until the veggies are cooked about 2-3 mins. Season the rice with more soy sauce or salt as needed.

Equipment

  • Wok or large skillet, preferably nonstick

Ingredients
 

  • 3-4 cups day-old rice or refrigerated/chilled left-over rice, (or however much you have)
  • 2 tbsp olive oil or oil of choice
  • 3-5 cloves garlic, peeled and crushed
  • 1-2 tbsp soy sauce, adjust to taste and based on the amount of rice
  • salt, adjust to taste
  • 2 eggs, beaten
  • handful frozen peas and corn, (or whatever vegetables you have at hand)

    Oh I am so glad that one of my friends decided to post a picture of fried rice form your site. I have been looking for a good recipe for Fried Rice, Pancit and Lumpia for a long time. I can't get htese anywhere where I live so I have to make my own. I spent 10 yrs out of my life in the Philippines, Clark Air Base my Dad was military, and we traveled all over the island.     Please tell me how you cook the original rice. I have not been able to cook rice good. It always comes out like a big clump of glue, not in individual grains.

      I use a rice cooker. In the Philippines we rinse it twice and then drain really well and my usual ratio for jasmine rice would be – for every 1 cup of rice – 1 1/2 cups of water – increase the amount to however much you want but always use that ratio. This is good for stove top cooking too. Also, make sure to let the rice rest for about 10 minutes after it's done cooking. That way, it will dry up a little and won't be clumpy. Now this works perfectly with Jasmine and even with Basmati Rice but American rice – you may have to lessen the water. It's been a trial and error for me as well but once you get the formula that works for you, it really is easy. Hope it helps.

    I tried making this for dinner tonight and it was a success! I added some left over roast beef wrapped asparagus which i chopped to bite sized pieces. I particularly like your way of cooking the egg in the middle of the rice. I used to have to cook the egg in a separate pan ( means more dishwashing to do haha). Your method is easier and my fried rice turned out great. The hubby loves it! Thank you for this recipe !

    My Aunt is from the Phillipines, I have been eating and making this fried rice since I was a kid. My kids LOVE it. Sometimes I make it with ground beef or even hot dogs. Cheap and so very good.

    I've often made fried rice and even wrote a post on it, after learning some techniques from Grace Young. But I've never heard about the "making a well for the eggs" tip – how great!       However much you have as left-over. This recipe is adjustable to that. Just let your taste be your guide. 3-4 cups should be good. 🙂

    Can you use minced garlic instead? I’m new to cooking Filipino food, I’m trying to learn and practice making Filipino foods so I can teach my son more about his heritage and I believe food is universally important to every culture, so I’m starting there.

    My family loves this fried rice! My grandchildren are so crazy about it that I have started to keep cooked rice in my freezer just for this. (They love jasmine rice.)     I made this tonight into a dish I call “Chinese Tacos ” even though it’s not chinese nor does it use a taco shell. I just line a tortilla with raw spinach or salad ( to keep the sauce from dripping through ) and add in the fried rice that has leftover chopped chicken and barbqd pork. I top it with a sauce made of half mayo / half horseradish, roll it up and enjoy ! This stretches the leftover meats , and is really tasty ! Thanks for the recipe !
